I find myself using mayo on lots of things, and today I tried an olive-oil based mayo and it tasted just fine for me (plus, I add lots of spice, so differences in taste are negligble). No sugar, no carbs, all ingredients are Atkins-friendly. All things being equal, I'm tempted to go for the olive-oil based. Is there any reason why I should or shouldn't do that?

It tasted pretty good. I'm trying to remember the name of it (can't find it online). Someone had me try it at a party. Said there was "no sugar, no carbs," but I wonder if it had one of those wacky sugar pseudonyms ("evaporated cane juice") because I can't seem to find it online...still searching....- M/37

So you think it is the organic one down the list there? It looks very good to me. Perhaps more expensive that what I usually get (Hellmans) but it may be worth it.

I think most mayonnaise is made with soybean oil or canola oil. I try to avoid canola oil because I don't think it's healthy, and I'd rather eat olive oil than either soybean or canola (as long as it doesn't contain sugar like Miracle Whip). There's a mayo called "Vegenaise" that I like and they make a version with grapeseed oil. It tastes so good I could almost eat it out of the jar with a spoon.
If you can, please post the information for the olive oil mayonnaise that you've found. I haven't had much luck making my own.

In my cooking, I avoid all vegetable oils and most seed and nut oils. I prefer to use butter, ghee or clarified butter, coconut oil or other saturated tropical oils, or animal fats like schmaltz or lard that I render myself. Using lardons provides great fat for cooking and give your food a wonderful savory flavor - you can even try some regular bacon for this purpose. I do use olive oil, but mainly in salad dressings. I take supplements of borage oil and fish oil with EPA and DHA a few times a week.
