  • Cooking White Wine

    Hey everyone,

    Just wanted to know if cooking white wine is acceptable. Forgive me if this has been discussed already; I could not come up with anything using the search.

    I checked the bottle in the store, and it has no carbs. Also, it was in the regular aisle, no id necessary, so I know it does not have any alcohol in it.

    Soooo, what's the verdict???

    I like to cook with dry vermouth when white wine is called for. It's fortified wine, so it keeps for several months in the refrigerator. 1/2 oz (1 Tblsp) of dry vermouth has about 1 g of carbohydrate.

      All wine has some carbs. They are allowed to say zero carbs if it is less than one per serving BUT CHECK THE SERVING SIZE they are talking about. However, wine is not allowed until Rung 5. Having said that, I have on occasion used a splash of DRY -NOT SWEET- wine in a recipe when I know the alcohol will cook off. I have been OK but everyone reacts differently. It is not worth triggering a binge.

        Jill says it right. Wine has some carbs. In cooking, most of the alcohol evaporates, but to be honest, when I hadn't yet reached the alcohol rung of OWL, I played safe and used a very diluted white wine vinegar instead of wine. Worked well.

            Technically, alcohol is not permitted on Induction; however, marinating chicken in it never posed a problem for me personally. Your mileage may vary.

            I love chicken breasts marinated in just a touch of red wine. A little goes a very long way.

                Just to make sure, you guys are talking about "cooking wine" and not just using regular wine to cook, right???

                  lucky for me i don't like wine of any kind. being a german texan though i do like to cook with beer! there really is nothing like chapel hill sausage and green beans cooked in beer. but i'll have to make do without it till i get to that particular rung.

                    Where I am (Italy) you can't buy commercial cooking wines... so either you use the real thing, or make do with diluted wine vinegar.
