I read a post somewhere and the poster said they added some sweetener to the coconut oil and ate it like candy. I just have to tell you that it is delicious like that. I took a couple tablespoons of coconut oil and softened it in the microwave, I keep mine in the frige, and added some Splenda, coconut flavoring, and a little vanilla. I was a little hesitant about just eating it that way but I did and it is DELICIOUS! I was reminded of a really good coconut macaroon. Which is one of my favorites. So, if anyone is looking to add some extra fat I would suggest doing it this way. I think I will try some other extracts as well.
