So I made fried chicken with the parmesan "crust" for dinner last night and had some additional cheese left. There was too much to toss out, so I went ahead and snagged some shrimp and battered it up. Holy smokes! It's flipping awesome!

Okay, I make a real effort around here not to get sucked into too many delicious sounding recipes!! The more extravagant I get in the kitchen, the slower I lose!! However, I'm going to make a concession for the parmesan crust!
Is it just 1/2 cup of grated parmesan and egg for the binder? I've also read about using mayo instead of the egg if you're not afraid of the fat. I'm SOOOOO not afraid of fat and it sounds delicious!

I guess it was about 1/2 to 2/3 of a cup. I didn't measure as the parmesan was leftover from frying chicken for a family of 5..lol. I did use egg with Tony C's to spice it up a bit and it really did taste fabulous. I nuked the leftovers for lunch and it tasted just as good today as it did last night.

Holy Moly!! It IS yummy!! I mixed sour cream and mayo as a binder and then coated the chicken breasts with parmesan and they were fabulous!!! It didn't taste legal! It was awesome tonight and it's going to be awesome at least twice tomorrow! It was all I could do to add broccoli to my plate! Very good! Thanks for posting!
