  • Food for Vacation!

    I'm going to the beach next week and stuggling with what to take for breakfast. I want to be able to each breakfast and lunch in the room. We have a mini fridge and microwave. Any suggestions??

    Cold BBQ chicken, deviled eggs, coleslaw that you make at home and bring with you, salads are all good lunch choices. The one minute muffin from egg and flax in the microwave would be an easy breakfast. I would take some store sliced ham and cheese and make it into a breakfast sandwich.

    smoked salmon and cream cheese is nice for brekkie or lunch.

      since you have a mini fridge in your room you could try this recipe for the mock danish. most stores sell a 6 pk of eggs so it wouldn't take up much room. neither would the cream cheese. you'd just need to take a plastic container to fix it in.

        You can do eggs, & bacon in the microwave. Add cheese & voila - a good breakfast.

          You can bring fresh veggies. Sweet peppers, radishes, tomatoes, onions, cabbage are among those vegetables that do not require refrigeration and will keep in room temperature. In fact, you can do a portable "root cellar", by putting the veggies into a cooler. Wipe the veggies so that they are dry. Line the cooler with some newspaper to absorb excess moisture and, if necessary, put in a cold pack. But as long as this cooler's temperature remains at room temperature or slightly lower, the veggies should keep. I've done this when I go on work-related conferences out of town and stay in a hotel and the veggies keep nicely.

          If you do bring something like lettuce. Don't cut it up. Leave it whole and only remove from the lettuce head what you will be using. Keeping the lettuce intact will keep it fresher longer. In fact, don't bring any cut up veggie unless you plan on eating them the same day. Otherwise they will spoil.
