      MIM stands for either "muffin in a mug" or "muffin in a minute." There's recipes all over the 'net. Just do a search for either of the above. Here's one I found on LC Friends.

      I also enjoy the minute muffin. I have it everyday with my bacon. It helps keep things goin', you know. I'm on induction, and I think it's okay, since all the ingredients are induction safe.

      Serving Size: 1

      1/4 cup flax meal
      1/2 teaspoon baking powder
      1 packet splenda packet
      1 teaspoon cinnamon
      1 large egg
      1 teaspoon butter

      Put the dry ingredients in a coffee mug.

      Stir.

      Then add the egg and the butter. Mix.

      Microwave 1 minute (or more). Take out. slice, butter, eat.

      Cream cheese would go nicely, too.

      Notes: 11.1 total carbs, 8.8 fiber, for 2.3 net carbs.

      The shape of this can be changed by making it in a bowl.

      It can be "toasted" once it's cooked.

      The cinnamon can be replaced. I would imagine that any sugar free syrup could be added.

      I use liquid Splenda (zero carbs) and don't add the PB (take those carbs away). Sometimes I use all flax meal, sometimes use a mix of flax, ground pork rinds (again, zero carbs) and/or coconut flour. I don't use butter, I use coconut oil. I also don't put the dry ingredients in first, I put the egg and oil in first and mix the dry ingredients in really well. I also add a pinch of baking powder (count the carb there, I didn't for the longest time!!) I often double this, leaving out the Splenda and adding dried parsley and oragano, and make it in a mold that looks like a slice of bread, cut it in two and use it for sandwiches for my husband. He loves it! When I make it for my hubbie, I mix the dry ingredients together and then add them to the thoroughly beaten eggs in a bowl, then pour the mixture into the mold. I use a small, evenly round, bowl when I make mine. Just like an english muffin.

      You can do just about anything you want to with this recipe. There's even a recipe for 3 minute choc. cake on the LC Friends recipe forum using the same format. Try it, you'll like it (not the choc. cake, but the MIM, even I wouldn't mess with anything chocolate at this point!)

        It's okay for Induction if you change the serving size from 1 to 4 and eat not more than a serving per day. One muffin has 1/4 cup of flax meal, which is 4 tablespoons, and flax is limited to 1 tbsp per day as a daily fiber supplement.

        Coconut flour is "legal" from OWL Rung 3 on.

          Thanks for the reminders, Georgiana! It's always important to modify a recipe to what part of Atkins you are doing. When I was on Induction, I would only make these a couple times a week, following the flax rule, and replaced the additional flax with ground pork rinds. Now that I'm doing Rung 3, I mix and match, using some of each mostly (including almond flour, which I failed to list). And I still only make these a couple times a week! They're just a good sub some mornings for another plate of eggs!

              Wow, thanks, Georgiana! They both look delish, especially the cream cheese goodie, which will get me my protein and fat! Gotta love those creative persons who work out these wonderful recipes for us, don't ya!!

                Today is weigh day - no difference, nothing less, BUT thank goodness, nothing more. I'm just hanging in there. I've been off my exercise this last week, have to work on that more this week for sure!

                  I lost 2 more lb. I haven't checked my body fat yet though, so I don't know whether to celebrate or commit Hari-Kare. I think I cut calories a bit too much the last 8 days, I've averaged 2,221 cal last week. Monday and Thursday nights are very brutal. Those are the days I do pushing exercises, i.e. presses, and my shoulders are blown out from injuries I received when I used to dirt / mountain bike. Luckily, I have access to those electrical stimulation boxes and that kills the pain, but I use it only once per week. This evening I do back exercises and when I do neutral grip Australian pull ups, the stretch in the opposite direction pretty much takes the pain away. This morning legs and abs.
                  When I go back to school August 24 th. I'll probably change my workout and do chest and back the same day with shoulders, so I can superset.
                  My diet is so Spartan. Meat, eggs, fish and oils, green leafy vegetables and psyllium husk, that's it. I just don't crave foods. I never have. I get hungry, but all I can think of then is 8 oz. sirloin with 3 sunny side up eggs. I weigh about 217 lb now so I've dropped close to 30 lb 3 days shy of two months. And I haven't done cardio in 6 weeks. I guess I went further than my mimi goal set July 8 that I randomly picked for Fit Day purposes.

                    Norman~ You amaze me with your wittiness! I do enjoy reading your articles and such and your given twisted advise... now you should know better then to not do cardio in 6 weeks!!! It is heart healthy buddy! I know your are more into body building and getting body fat down, but do remember your heart, it is a muscle too that needs a workout as well!

                      Yes, I totally agree with you. The problem really is the weather here in Miami. It's always raining in the afternoon and evenings. What I tend to do is super set some of my exercises as to make them somewhat cardio. This morning I super setted squats with pullovers, leg extensions with Australian neutral grip pull ups and leg curls with inverted rows. Another problem is my mom. I lost my dad recently and I have no brothers or sisters. So, in the afternons, I run errands for her: groceries, manage her affairs, etc. and take her for rides around town in order to alleviate her depression.

                      Also, as you know, I'm a Ph.D. student and spend hours doing research. I'm not married so I have to spread myself thin. If I would of known, I'd never had gotten divorsed! Seriously, better to be alone than in a dysfunctional relationship. I almost got married this year to a peditrician who lives on the other side of the state. I've been her pal for years, but when we moved into a relationship, she began to get horribly jealous, not trusting and showing behavioral problems that I could never cope with. It just so happens that my closest buddies here in Miami are the tenure track people of the the math department. They happen to be mostly women! They are happily married so I would never go "there." She couldn't handle that they were women.

                      So, what does this have to do with cardio? I really dislike doing cardio indoors. Give me the wide, open places anytime. I find elipticals, staionary bikes and treanmills desperatley boring. Thanks!

                        Back in my "working days" I worked for an attorney who was into strength training. He didn't go to the gym (doubt he ever did cardio) but he had this little routine. Full body press from a hand stand and squats on one leg at a time, and sit ups, lots and lots of sit ups. He was pretty buff. He believed in eating lots of veggies, like in carry out stir fry I told him one day he'd get thick around the middle, no matter how many set ups he did, because of all that sugar. I guess he's in his 50s now, I still stay in touch with his current secretary, think I'll ask her if he's still as buff as he was when I left 6 years ago!

                          Thanks for your confessions...I too have confessed to my ups and downs (on another thread)...although I have not lost like you have But am taking today to apply this woe for myself 100% as a way of LIFE..not a diet.
