    Re: pumpkin

That's a good, induction-friendly breakfast. As long as you keep it to a half-cup. Pumpkin is to be measured at 1 cup raw, so cooked would be about a half-cup.
People who say it can't be done, should not interrupt those doing it.

I love pumpkin. I just find I need protein with it because it doesn't seem to keep me full for long on its own. So, I usually only eat it for breakfast if I know I will be able to eat again in like 2 hours. Or I have it for a snack or dessert.

I use Mitzi's "M.U.P" recipe that she posted on the forum..very similar to what you made. Yummy!

i'm a big pumpkin fan too. it's quick & easy to fix and is great little treat or for breakfast. i sometimes add cream cheese to mine too, but not often. in rare occasions i add a small pat of butter to it instead of the cream cheese.

I never liked pumpkin prior to Atkins. My favorite way to eat it is to warm with a pat of butter, salt & pepper and a half-packet of Splenda. It tastes just like baked or mashed sweet potatoes, which I love. It's the best comfort food when you can't have mashed potatoes--very satisfying and filling.

I was going to try this a while back, but forgot. Definitely will be having a bit for desert tomorrow.
