  • Video of how to make OOPSIE ROLLS???

hi guys. just wondering if any of you have seen a video of how to make the famous OOPSIE ROLLS? god knows i tried so many times but they all yield the same thing -- soft, saggy and crepe-like. dont know what other tricks to try now to make it perfect. or maybe, if someone out there makes it all the time, perhaps you can record it and share the secret with us? i really love the taste, and its versatility, despite the flaws.

    thanks!

Have you tried using muffin-top pans? They're baking pans that are meant for making, you guessed it, just the tops of muffins. I make the rolls pretty regularly and they consistently come out great.

I bake mine on parchment paper - I use an egg mold (it's a round piece of metal) and fill it with the "dough"

This is not a video, but Cleochatra's tutorial with pictures was helpful to me.

Yes, all the ingredients are allowed in Induction.

Are you beating the whites until stiff?

If you want to save some cheese, then you can make Revolution Rolls instead and use those as "bread".

You need to beat the daylights out of the whites. I actually use mayo instead of cream cheese. Saves on the calories and carbs and they turn out just fine. I have looked all over here for a muffin top pan and can't find one. Will have to break down and get one off the internet (although the shipping can be quite high).

Good point, are you hand-beating or using an electric egg mixer?

Me? I'm hand-beating them, out of need (no mixer in the dorm kitchen). But there were many egg whites wasted the first times I tried this. Had to ask my dad for tips & tricks before being able to get the famous stiff peaks.

And yes, Dad is the one responsible with beating egg whites in my family.

Haha, sorry, I meant to ask the OP. I've had to hand-beat the egg whites once or twice, and I can't imagine doing it that way all the time. Much respect!

Or, I could use someone explaining to me what "folding in" the yolk mix to the egg white mix means or how you do that. When recipes go there, they lose me!
