  • Fresh green beans?

    I just realized green beans are not on the acceptable foods list for induction, and I ate them yesterday and today! They are fresh green beans from the garden doubt that makes a difference, but what should I do? Fitday counts them as having like 9.9 carbs and 4.0 grams of fiber. I feel like a complete dope! Help!!!

    They are on the list - they are listed as "string beans". Lots of people have been confused about this

        My god, if I couldn't have green beans on Atkins, I would've quit within a week. Bacon + chopped onions + green beans + cast iron pot for like an hour = heaven.

          Mmmmm sounds good. Do you add any liquid? I'm assuming you chop up the bacon? What temp?

            String beans----I have a surplus of them in my garden this year. I don't know why either, but I've been eating them fresh and freezing them. If I get another 2 pounds to freeze, I won't have to buy any this winter.

              No, I just put some butter or olive oil in the pot and maybe get a little caramelization on the onions over high heat, then put in the (chopped, think maybe an inch) bacon about a minute before I put in the green beans. Frozen is fine, I buy these huge bags at Sam's club. You can fill the pot all the way up, where you can hardly stir, because those suckers will cook way down after they simmer a long time. Keep an eye on them every now and then, though, to make sure they don't burn on the bottom (every stove is different, especially gas vs. electric). You'll know you're done when the green beens take on the slightest brown tinge, maybe one or two of them even looking brown. Cajuns tend to cook everything well past the point of brown (see also: roux), so if you need me to take a picture, I'll be more than happy to make green beans tonight.

                  I've always wanted to do green beans this way. My question is about the frozen ones you buy at Sam's. Are they exactly like the raw, just frozen? The reason I'm asking is that I never like frozen green beans. They don't have the taste or texture of fresh, or even canned. Your recipe sounds delicious!

                    I don't like the frozen EXCEPT for in this recipe, to be honest with you. The green beans cook down a whole lot and become much more tender than you'd normally serve them. You could do this recipe with raw beans, but I use frozen just because it's more convenient for spur-of-the-moment cooking. If I'm steaming green beans or doing something else with them, I prefer raw (but I can deal with frozen in a pinch).

                      I use the frozen green beans from Sam's Club all the time....I put them in a pan with a small amount of water, a couple slices of bacon (and a little bacon grease), a small onion and let it simmer until they are done. I add a small amount of sea salt, fresh ground pepper and dill. They are delicious and taste just like fresh from my garden. My beans are starting to come on in the garden now -- we've had them a couple times also.

                        All right! Dinner is done and I've taken pictures. Also, Carole mentioned something I forgot - make sure to season to taste with salt and pepper! I use sea salt personally. Okay, here's what the onion and bacon looks like after they've been cooking a while. I don't know how well the picture shows it, but the onions have gotten semi-transparent and some pieces have slight browning on the edges. Just after I took this picture, I added the green beans.


                        This next picture is when I added the frozen green beans. As you can see, I couldn't really stir the mixture all that well because the pot was too full.


                        This final picture is when they were juuuust about finished. Notice how much they cooked down...

                              The canned ones with no salt added (INGREDIENTS: green beans, water) are fine. Different texture than fresh or frozen and I don't know how they work in recipes like the one above but they are allowed.
