We took three 300 pound hogs to the butcher and now have hundreds of pounds of pork in the freezer. Pork chops, steaks, smoked bacon, ham and sausage. We have our freezer full as well as the freezing section of the fridge, as does my parents, sister and BIL. How much is too much pork in the atkins diet? btw it is really good when home grown!

I am soooo envious 
The limits on meat on Atkins are to eat enough food at each meal/snack to satisfy your hunger and not to be stuffed, so eat your 'up to 20 net carbs with most of the carbs from your 3 cups of veg' and as much pork as your body needs and you won't go far wrong.Wondering how to get 'most' of your net carbs from your induction veggies?

I like pork, but I have to watch myself whenever I eat it, because I have a tendency to over-eat pork---especially pork chops or ribs.~Megs~

There's no "too much." Just make sure you are eating your vegetables and doing some exercise.
Try the patty from this video. It's great -- and you can, if you've had some of your pigs made into sausage and made bacon or pancetta from the bellies, you can use your own, home grown ingredients.

I didn't personally kill the 3 hogs. I got them as little baby piggies and raised them to big, giant hogs after over a year of age. Then put them in a trailer and hauled them to the local butcher shop. They were about 300 lbs each.
I do butcher the goats and chickens and turkeys though, myself. The butchering of the hogs is just to big of a job. It takes a pulley and all sorts of equipment to hang it up and also I do not have the powerful electric saws needed for such a big job. Smaller jobs can be done here at home, and are. My husband is a bit squeamish so I do most the butchering. I'm an old ER nurse so nothing bothers me, besides, I was brought up this way.
We prefer homegrown meat because we no there are no chemicals in it, as much as we can control it. And the meat is "happy", raised the way animals should be raised. We don't use hormones, anti-biotics or anything funky on our animals.
The pork chops on these hogs are huge and look like steaks. They are one inch thick and are marbled with fat and melt in your mouth, tender as can be. Will be eating some tonight.
