  • Let's hear it for bacon and other bits of pork!!!

    Bacon (and sausage and pork) helped me soooo much while starting the Atkins. I did exercise a lot, though, because I was still worried about the amount of fat I was consuming. The fattier foods kept me much more satisfied.

    On occasion, I made this sandwich, without the bread, topped with with an egg or with cheese (or with both). I also tried it with turkey products, and it was still really good -- and is the version I now make almost exclusively.

    What do you think?

    Do you cook yours in the oven? I don't think I would want to wait that long unless I was making it for lunch or dinner.

        Small ones, cooking first pieces in the microwave, have been done in about twenty minutes. Ones as big as in the video take, after the patty is made, about forty or forty five minutes to get the outside bacon crispy, with flipping it every 10 to fifteen minutes. They get crispy more quickly if you dump the grease from the pan or cook it on a trivet so that its out of the fat and the air can get around it (I think that's what they're called).

        I like the smaller ones (half the sausage, one piece of bacon on the inside and only two on the outside -- wrapping and spinning to overlap instead of weave). They cook much more quickly -- like twenty minutes at 350. If I do a large one on the grill, I use indirect heat and go let it cook for an hour at 250 (really just until the bacon is crispy -- the sausage is always cooked by then). It can get a nice smoky flavor that way, too, if you add wood chips.

        I'm maintaining weight now and am not eating as much saturated fat or as many calories. I like to use turkey breakfast sausage, soley. We found one we like. Sometimes the bacon is pork, sometimes it turkey (I like using the pork more, though). With turkey sausage and real bacon, the small version of the patty only has about 250 to 300 calories (depending on the different brands). Add some cheese on top, and I'm satisfied for a good little while.

        They're great for parties, too.

          Thanks for the idea. This seems more managable than the original bacon explosion recipe. I like the video.
