  • yellow squash

    i picked up some yellow squash from the store thinking i would make this spaghetti squash i hear everyone talk about..not realizing that spaghetti squash is itself a kind of squash. (have you noticed if you say squash too many times it starts to sound reeeaaally funny ha) anyways..will my attempt at "spaghett" still work? what do i do..

    No You're going to need spahetti squash for this project. :0
    So what kind of squash did you get? Some squashes (the so called summer squashes) are ok for induction but most squashes (winter squashes) are only allowed on the starch rung.

      hmm it just said "yellow squash". it is sort of thin..fatter on the bottom and narrow on the top.

        Sounds like it a summer squash then. You can google some recipes. I think many people bake it. I usally prefer it stir fried. It is a popular squash. Maybe someone else with more liking for squash than me have a good recipe for you.

          I love it with a half cup of cream poured over the slices and topped with parmesan. Then bake it in the oven. Mmmmm. I also brush it with olive oil and grill it along with zucchini, peppers, and eggplant. I do a bunch at once and eat it all week. It also makes a great stir fry julienned with zucchini and peppers and onions. Or dip in egg and crushed pork rinds and pan fry. LOTS OF WAYS to use it! You can even hollow it out and stuff it with ground meat,tomatoes, onion and spices and bake.

            I use all summer squash as "noodles" and "pasta" all the time. For pasta, I grate yellow squash or zucchini on the same type grater that you would use to make cole slaw. Then I just sprinkle on a little salt and nuke it for about 40 seconds. I also steam it, which works well.

            I have been using a mandolin slicer to make zucchini lasagna noodles since last year. With a mandolin and a somewhat large, but firm, zucchini, you can make nice, thin noodles. I made my world famous lasagna for my sisters this summer with zucchini noodles, and they didn't even notice. I told them part way through and they had to dig it apart to make sure I wasn't kidding them. I used yellow zucchini, so there was no dark green to give me away.

              If you like pesto, you will love squash "pasta" with pesto. I just made my second batch of pesto of the summer.

                  this is a spaghetti squash. It has a hard outer shell.


                  this is a yellow squash. The outer layer isn't as hard.


                  Good luck with whatever you do. I love both of them. I made homemade spaghetti sauce yesterday so I won't have to worry about getting some with sugar in it (I'm on Atkins PLUS Type 2 diabetic so I'm not suppose to have any sugar to begin with). I bought a spaghetti squash today so I can try my new sauce!!

                    thanks imagood1-i definitely bought yellow squash the first time. went back to the store yesterday and found some spaghetti squash-soo excited to make it!!! although i'm not quite sure how..will be searching the boards lol.

                      I usually cut it in half and nuke it. this takes a while but it is a good way to prepare it. You can also prick it and boil it or you can cut it up and bake it. You will need to remove the seed parts (I do that after I have cooked it)

                        I cut the squash in half (long ways) - scoop out the seeds and cover it with plastic wrap. Microwave for 5 - 7 minutes (until the spaghetti will come out easily with a fork). Discard the shell. It's delicious.

                              Thanks Sunny, that's an awsome idea for the squash lasagna! I've been wracking my brain to come up with some yummy Italian recipes. I think the cooked spaghetti squash would be nice with some homemade sauce and layered the same way would be yummy as well. Now my brain is working over time...lol
