  • Road Trip!

So it sounds like I'm going to be spending the better part of a week in the car as I spend 3 weeks driving around the western US and Canada (Calgary, Salt Lake, Phoenix, LA, Reno, San Francisco, Portland, Vancouver, Nelson, Calgary). For the days I'm driving it'll be about 12 hours a day with minimal stops, I'll also be living in the desert for a week with a tent and a cooler. I'll be off induction at that point and I think it's safe to say I may skip to maintenance mode at least for the trip, I'd like to keep to no more than 100 carbs, ideally around 80. Suggestions for road snacks/meals/travel? I guess I won't truly be considered Atkins as I will be having caffeine, it's the only time I do, road trips, I'm doing this trip on my own, need to stay awake!

Get those mayo packets -- i think smart and final has them and iirc they dont need refrigeration. they may have sugar, but i think its negligible

There is no need to go off induction while you are gone - are you going to pack every single thing you'll be eating in the cooler the 2 weeks you are camping? Or will you be going to the store from time to time? There isn't much that can't be taken with you and those things that don't keep for long could be purchased along the way.

      Good luck

Ditto canned...everything. Mayo will keep in a cooler...I've put meat in a ziplock freezer bag, then either in another bag or in a plastic container - fill 2nd bag or container with water & freeze. Will keep many days in a cooler that way - don't drain the water, it helps keep the food cold (If you have access to a freezer just before the camping trip).

            Re: Road Trip!

Thanks! I love the frozen meat inside an ice-cube idea, that will be good for camping! I will be past induction at that point, I only intend to be on it for the 14 days and go from there. Having been vegetarian up until 4 days ago most of that stuff still sounds so gross to me but I'll have to get over it! I've been going slow by adding bacon was a big step for me (hadn't eaten it in over 2 years) I was eating shrimp, salmon and dairy though so those are easy for me (can't take the Mediterranean out of me so I was technically a lacto-ovo pescatarian) I'll also be sure to pack mayo for my tuna, hadn't had that in my fridge for years! Funny how life-long perceptions can be wrong.
