Hi you guys:
Yesterday I made these lovely chicken cutlets for dinner. So here is the recipe & then I have to rave about the super crisp 'breading" - way better than breadcrumbs!!!
For 4:
Left over chicken - pulverize in food processor, no water, approx 3-4 cups
(I avoid canned foods as much as possibles so I used up left over roast chicken)
0.25 cup green pepper chopped
0.25 cups chopped onions
1 tsp seasoning ( I love cajun)
2 oz shredded cheese
1 egg
& for the breading, pulversize 1 cup of spicy pork cracklings dry.
Simply, roll all the cutlet ingredients into balls, then flatten.
Roll cutlets in the crackling dust
Heat olive oil & little butter in non-stick pan. Fry until crisp and golden brown on both sides.
I had these with 5oz cooked cauliflower, shredded with lots of butter.
