  • Atkins Bars

Well, it's true. These bars DO stall your weight loss. Over the past week or so (before TOM, sorry guys) I have been having one (or two) a day cause I get bad cravings and thought they were better than binging. They stopped ketosis and I didn't lose any weight for two weeks. I have still lost inches, which is wonderful, but the scale stays exactly the same.

I stopped them and am in ketosis all the time. Don't know what I'll do next month, any ideas?

Looking forward to losing some more weight, back with the programe.

The sooner you can kick your sweet cravings the better you'll be in the long run. When I want something I eat celery with cream cheese or make pumpkin desert or a mock danish -- none of them are real sweet but they seem to hit the spot.

      Hi Carole,

Celery is one of the few vegetables that I absolutely hate. Carrot is second. I like pumpkin a bit. What's a mock danish?

        Mock Danish
        one serving

        2 oz cream cheese (2)
        1 large egg, beaten(0.6)
        1 packet Splenda(1)
        1/2 teaspoon vanilla extract(0.3)

Put cream cheese in a small, microwave-safe dish. Microwave on high for about 1 minute or until softened. Remove from microwave. Stir in the egg, Splenda and vanilla extract into the cream cheese. Put back into microwave and cook on high for 2 minutes.

        Total carbs: 3.9 grams
        Fiber: 0 grams
        Net carbs: 3.9 grams
        Cheese allowance: 2
        Sweetener allowance: 1

*Note: Cream cheeses vary in carb count. So be sure to check your packages. Also note that some people add a tablespoon of fiber supplement to their Mock Danish to give it a more "bready" (sturdy) texture. If you do this, you MUST include the the fiber supplement carbs.

          Pumpkin Desert

          Mix the following together:

1/2 Cup Libby's Pure Pumpkin (NOT pie filling which has sugar)
          1 ounce cream cheese
          1 ounce heavy whipping cream
cinnamon, ground ginger, ground cloves to taste
          1 Packet of Splenda

Heat in the microwave for 30 seconds - Stir. Heat another 2 minutes

Top with fresh whipped cream (1 make 2 Tbsp of whipped cream to top this with)

this comes up to 5 net carbs
with 2 Tbsp whipped cream it's a total of 7 net carbs

I made this today and forgot to add the cream cheese -- I think I liked it better without -- just adjust your carb count if you don't put it in.

            Re: Atkins Bars

this is another great recipe for Pumpkin -- I made this last week:

            Pumpkin Mini Cheesecakes
            Induction recipe
            Makes 6 mini cheesecakes
9 total (or 4.9 net) carbs per mini-cheesecake

            2 (8-oz.) packages cream cheese
            1 (15-oz.) can 100% pure pumpkin
            1 cup heavy cream
            2 beaten eggs
            1 tsp. vanilla extract
            1 teaspoon ground cinnamon
            ¼ tsp. ground nutmeg
            (optional)
            ½ tsp. salt
            6 packets Splenda
            6 mini pie tins
            (supermarkets, dollar stores)

Smooth ingredients together in mixing bowl, incorporating eggs last. Transfer to 6
Pam-sprayed mini pie shells. 400° for 15 minutes; then 350° for approximately 35 additional
            minutes, or until done.

                Thanks Carole.

I totally forgot about the pumpkin recipe. I know what we will be making this week.
