My family is going to eat garlic bread tonight. In the past we'd have french bread with lots of butter, garlic, and cheese, probably once a week. I haven't made it since last month, and tonight's the night. The problem is that garlic bread is one of the best (and worst!) foods on the planet. How will I resist? I may need to excuse myself from the house until they've eaten it all....unless anyone can think of a substitute?

Garlic bread.....
Started 8/31/09: 235.8lbs.
9/29/09: 227.0
10/13/09: 224.0 (yes, it's slow, but it's still happening!)
Goal: 140 lbs. AND...
I'd like a regular bath towel to fit all the way around me.
I'd like to be able to fit into clothes bought at a regular store, not a store for "large women".
I'd like to go on the annual rafting trip with my kids, confident that if I get tossed out of the raft into the river, I'll be able to hoist my backside back in with a minimum of embarasment! -
Re: Garlic bread.....
Others may have some suggestions, but how about making something comparable? An oopsie roll and make it into garlic bread, or make some cheese chips?

Re: Garlic bread.....
Oh, thank you so much! I will give this a try--even if it doesn't turn out well for me, it'll make me feel like I'm not totally deprived. Sitting without any substitute at all on my plate is such a bummer that I try not to let it happen very often. My dh (who loves me dearly and hates to see me unhappy) is sometimes guilty of encouraging me to indulge.Started 8/31/09: 235.8lbs.

I finally tried this, and it is sooo good!!Originally posted by arcticsp2003 View Post
I can definitely eat this happily when my family is having traditional garlic bread. I can't believe how buttery it tastes, with no butter in it. I guess that's what tons of cheese and some heavy cream will do, huh?

Re: Garlic bread.....
This recipe makes a wonderful "crust" for pizza. I use it all the time, and pizza just doesn't get much better than this. It does have a lot of cheese, so go easy.
I bake the whole thing on a cookie sheet, then cut in a circle about 2 inches bigger than a 9-inch pie tin and fit it into the pan. It makes a great deep-dish pizza this way and we can get in a lot of veggies so a serving doesn't have as much cheese. I use Italian sausage, pepperoni, red & yellow peppers, onion and sometimes spinach--yum yum!
Here is my recipe for low carb pizza sauce:
Low Carb Pizza Sauce
2 tablespoons extra-virgin olive oil
1 tablespoon minced fresh garlic
¼ cup finely chopped onion
1 cup tomato sauce (Hunt’s has no sugar)
1 teaspoon dried oregano
1 teaspoon dried basil
¼ teaspoon black pepper
2 tablespoons tomato paste (Hunt’s has no sugar)
In a medium saucepan, sauté garlic and onions in olive oil until tender. Add seasonings and continue cooking a few more minutes. Stir in tomato sauce, and then tomato paste. Simmer on low heat for about 10 minutes. Makes about 1½ cups.People who say it can't be done, should not interrupt those doing it.

Re: Garlic bread.....
I've made this quickie garlic "bread" several times. It is fast and easy to make and doesn't have leftovers (if you don't need them).
LC Garlic "Toast"
Open a package of string cheese, put a teaspoon of oil in a non-stick skillet and turn it on low heat.
Take your string cheese and put it in the oil and let it begin to melt, do not touch it. When it is almost melted sprinkle it with a pinch of garlic powder.
By the time the top is melted the bottom will be browned and crunchy. Remove it from pan and cool enough to handle. Eat it warm, you'll never miss garlic bread with you're Italian food again.
