  • I am in love....

    I made the mashed pumpkin last night...and I LOVE LOVE LOVE it. I cooked mine in the microwave (took about 15 minutes) whole, then sliced it in half, cleaned the seeds, peeled the shell off, mashed it with real butter, salt and pepper, and loved it! I have never had pumpkin any other way than in pie. In all the time I have been doing atkins I totally avoided the pumpkin but now I think it is going to be a weekly side dish. No one else in the family liked it tho...they wanted to add brown sugar..yuck!

    I froze the left overs in 1 cup portions, .5 cup for dinner, and then .5 cup for lunch the next day. I think I may also start experimenting with pumpkin soup since it is chilly here.

    Sounds yummy to me...I also like to mash up broccoli and cauliflower.

    I can't wait to start using pumpkins again (I can only find them in the late fall here).

      I was wondering if you can find the pumpkin meat frozen? I know I can get it in the can when it is out of season...

        I don't know. Pumpkin isn't popular here in The Netherlands. But I can freeze it myself when I buy it.

          Pumpkin soup is to die for! I loved it long before I was thinking of Atkins. It's long been a fall favourite in our house.

          Good for you for giving it a try when you were not sure how you'd feel about it.

              Even though I'm now doing maintenance, I always make cream of pumpkin, cream of squash and cream of cauliflower soup. It freezes easily and is a great "go to" meal when I want the "comfort food" feeling.

                I'm not so sure about the cream of cauliflower soup but the others sound tasty! I am going to give it a try. I am going to buy another pumpkin this weekend and cook and freeze it plain so I have it to try for a soup. I am thinking bacon and pumpkin soup sounds satisfying!
