  • Help with lunches

    I am in nursing school and I eat a packed lunch (I have a mini cooler)in my car monday-friday. I am in the induction phase and was wondering if anyone could help me think of some good induction packable lunches. PS- I dont have access to a microwave. Any help would be great I amgetting bored of eating the same thing everyday. THANKS

    how about chicken or tuna salad, with some mayo and chopped vegetables. thats always very tasty and satisfying.
    u could also get creative with ur salad, try adding some fried shrimp, or make some grilled chicken and beef skewers with grilled veggies. VERY YUMMY!!
    dont stick to one thing. try and get creative, u will feel better and u will love the food and not get bored easily
    oh and try some mashed cauliflower with butter and cream cheese. that tastes even better than mashed potatoes, trust me!!

      Its tough without a microwave. I usually eat salads for lunch. Salad nicoise (no potatoes), chefs salad, greek salad, grilled chicken caesar, Thai beef salad using Splenda. You can also do smoked salmon roll ups, egg salad. minced asian chicken in lettuce rollups. Cold BBQ chicken and veggie sticks with blue cheese dressing. And don't forget soups in a thermos. We have a pretty good salad thread in our recipe section somewhere...

        Not sure what you have tried yet. This might be boring but one of the things I do is take a large lettuce leaf, layer some turkey on it, mayo and some cheese, then roll it up. Or if my turkey is the right size, I will spread mayo on it, shred up lettuce and cheese, sprinkle that on it and then roll it up. Obviously, you can add what ever else you might like in place of the turkey.

          I have done roll ups
          I like cold meat cuts. So I may bring left overs and dip in a mayo dijon dip.
          Veggies to dip and eat with stuff/dips like chicken pate, smoked salmon cream cheese dip.

              I have been eating leftovers from the night before, of course they are cold which hasn't bothered me too much. Cut up steak, ckicken, egg salad, cheese cubes, boiled eggs basically thats about it other then my veggies. I haven't done a salad yet because I wasn't to sure about dressings. I love ranch but I wasn't to sure if I could have that plus I tend to over kill on dressings and I think it could be a downfall for me. Any good ideas on dressings? I don't like anything bitey/tangy like vinegar.

                olive oil is perfect for dressing any salad. its 0 carbs and is VERY good for you.

                  As far as the lunches i would say chicken or tuna salads.... for snacks maybe some cucumber slices or sliced pepperoni or salami. Good Luck!
