  • Pumpkin Minute Muffin

    I have made on occasion the minute muffin with just the flaxmeal, baking powder, cinnamon, egg mixture. ( And to avoid posts 'how do I make it', just mix together those ingredients and microwave for one minute in a mug or bowl) I have never been able to eat it alone, however, as I didn't like the taste by itself. I always ate it with cream cheese at least.

    This morning, while mixing one up, I added about 1.5 Tbsp of pumpkin, changed the cinnamon to pumpkin spice, upped the micro time to 1.5 mins and YUM! I didn't end up wanting anything on it. It was so good. Just thought I'd pass along! I'm sure someone else has already thought of this, too.

    oooohhhh just thought i was getting bored with it. I bought some pumpkin pie spice and all the ingredients are legal. Thanks for the post. Can't wait to try it.

      Sounds a great variation!!

      Remember that the limit for flax (linseed) on induction is only enough to help with any constipation issues, so don't go overboard on it. One or two tablepoons is about the maximum, so you might need to scale down any recipes you use (I have seen muffin in a minute recipes that call for 1/4 cup or more of flax ) or divide it to make 2 muffins and eat only one of them.
