Parmesan cheese - canned or fresh??

  • Parmesan cheese - canned or fresh??

    I've always used fresh Parmesan cheese for my recipes, but both I and our little podunk grocery have run out. It had never occurred to me to use the stuff out of a can (which they have), and I was wondering what everyone else uses.

    So the Poll Is....
    Fresh Parmesan ?
    or
    Parmesan from a Can?

    It depends on what I'm using it for, if I'm using it like a bread crumb sustitute in a recipe, I use the stuff in a can. If I'm using it to actually flavor a dish, I use the fresh.
    1st Goal ~ 199 Onderland -Met 3/29/10
    2nd Goal ~ 174 No longer obese
    3rd Goal ~ 150 In the home stretch
    Final Goal ~ 145 or below (I'll know when I get there) No longer overweight

    Current Mini Goals:
    1) 35 pounds lost
    2) 40 pounds lost to move to Rung 5
    3) 45 pounds lost to update 15 pound loss picture series

      I use both fresh and canned Parmesan and Romano. I prefer freshly grated and use that most times when the cheese is a garnish. The canned, powdery stuff works better as a coating for foods (in lieu of bread crumbs) or for thickening or as a binder (meatloaf/meatballs).

        Thanks for the feedback. I've always used freshly grated, and it never dawned on me to use the canned for "breading". No wonder my results were so different.

          Just watch because some canned ones contain other stuff besides cheese.

            Good Point Jill, Since I don't usually buy the stuff. I know I don't buy the pre-shredded cheeses because of the added coatings, so it makes sense.

              Lightbulb moment for me. I'll make sure to check the ingredients on the can before I purchase. Thanks for bringing this to my attention!
