  • Having a hard time with the veggies

    Hi all.

    I'm on day 16 of atkins (still doing induction for now) and I'm having a heck of a time making myself eat veggies. I really just can't choke them down- especially since I don't have much of an appetite anyway. I've been eating just one big salad daily. (romaine lettuce only)

    When I would eat low-calorie this was never a problem....I was so hungry I would just scarf them down.

    Any non-complicated ideas for veggie dislikers?

    You can put some in scrambled eggs or an omelet or even an egg casserole.

    You can make a vegetable soup.

    You can make a stir fry.

    Bottom line ... it's not Atkins without the vegetables.

    You don't have to limit yourself to "salad".

      I like to make quiche on the weekends to eat throughout the week, and I add veggies to that.

          Why do you eat one big romaine lettuce salad instead of cooking some veggies, trying new ones and spreading them throughout the day? After all, there are 54 veggies on the Acceptable Foods List.

          Romaine lettuce is fine to eat, but eating only romaine lettuce is bad nutrition, imo.

            Try eating some garlic dill pickles, fried onions/peppers/mushrooms on your steak, slices of pepper dipped in dressing or a few olives.

                She's right! I'm having a great time with Linda's recipes. Tonight I made the "Just Like Stuffed Potatoes" and they were delicious. I find the key to getting more vegetables in is to be more creative and examine the endless possibilities. I'm already surprised by all I've been able to do with cauliflower alone!

                  How about veggies stix with a cream cheese or sour cream dip? Almost any veggie is good with a cheese sauce. Frying up a big batch of onion, peppers and mushrooms is a "go to" garnish for any meat during the week. There are lots of easy ideas.

                    What do you suggest for a meat garnish if I hate bell peppers and mushrooms?

                      I wouldn't do a garnish. Maybe a side plate of sliced tomato, cucumber and feta with oil and vinegar. Or a dill pickle (with no sugar-Mt Olive is a good brand) Or coleslaw made without carrot and using mayo, vinegar and a dash of splenda as the dressing.

                      Another thing I do to make my life easy is to steam a head or two of cauliflower until really soft. Pop in blender with some butter and cream cheese or sour cream and it makes a great mock mashed potato. If I don't want it that way I add some chicken broth and a bit of cream and make it into a creamy soup.You can then add other flavors like curry powder or a bit of salsa and jack cheese to give it more zap. You can also make a cream of broccoli soup the same way. I usually add some cheddar to my broccoli soup. Its, quick, do ahead, and helps my veggie count.

                          Sure but even from Perth it is a long trip to Guangzhou! I have a better idea. I would much rather come to you! LOL Perth is a lot nicer than GZ.

                            Sure is..we get about 9months of summer a year

                            My brother teaches music at some uni in Beijing...my mother was born in Shanghai and my aunts both in Beijing...they fled Russia and moved to China...my Grandfather is Armenian and also ended up in Harbin I think first then to Shanghai where he had a photographic studio...

                              I hear you! I hate veggies and Salads! :X just the thought of having to eat them has kept me actually with no hunger at all. I have to force some food down. I just close my eyes and chew as much as I can take every couple of hours. I dislike them so much :::gag:::

                              I started atkins in late november but every other week just sort of fell off the wagon and was not working out..late december I started to really follow it and added the gym from november to december I only lost like 7 lbs not following it right..from december to march 18 I lost 50 lbs give or take depending what mood my scale is on lol.
