    is there really no veg you like?

    I found when my kids were small and a bit picky I'd grate veg and make a sauce for meat....they never knew...

        I have to say, though, that this way of eating totally changed my taste buds. I don't know if it was going into ketosis, or my husband being a good cook, but one way or another I started loving onions, bell peppers, mushrooms and other "veggies" on Atkins. I would really recommend you give some vegetables another chance, especially using recipes from Linda's recipe site.

          As J. pointed out, doing Atkins will be very difficult (impossible, imo) if you do not like vegetables. But just because you don't like them NOW, it does not mean you can't retrain yourself to like them. However, I doubt this is going to happen unless you change your attitute towards eating veggies (closing your eyes is childish and doesn't help) and your way of eating them (chewing as much as you can is not the right way, imo).

          Most people like pumpkin. There are some recipes in the threads below.

          Or try cauliflower. You can make mashed or riced cauliflower... or it can be prepared like stuffed baked potatoes... or you can make pizza with it, for example.

          Or you can mix steamed veggies with mozzarella cubes.

          Or instead of using mozzarella, you can sprinkle crumbled feta cheese on top of steamed veggies.

          Talking about mozzarella, you can make Insalata Caprese. It can be made either with fresh tomatoes or with roasted tomatoes (sugar and balsamic vinegar can be left out when you roast the tomatoes).

          What veggies are you usually eating? How do you prepare them? Did you try all those on the Acceptable Foods List?

          Maybe one of your goals could be to try a new veggie recipe each week. There must be something you like!

          There is also the Veggie Challenge coming up soon; you might want to join. In that challenge, those who are on Induction need to eat at least 12 net carbs from veggies every day of the challenge, OWLers need to eat at least 17 and those in Maintenance need to eat at least 22.             I know my attitude towards veggies stinks but I do eat them. Hopefully I will enjoy them more as I go.

            I started atkins in late november but every other week just sort of fell off the wagon and was not working out..late december I started to really follow it and added the gym from november to december I only lost like 7 lbs not following it right..from december to march 18 I lost 50 lbs give or take depending what mood my scale is on lol.

                In another thread, you were saying something about cassava. How were you cooking that pre-Atkins? Maybe someone has an idea for a substitute, using low-carb veggies.

                  I agree with a previous poster - Since starting this WOE I actually crave veggies. I was NOT a veggie eater before. You may find that they taste better now than they did when you were eating sugar. I actually caught myself in the produce section saying ohhh yum- look asparagus is on sale! NEVER would have been so excited before! It has been fun getting creative too, cruise into the endless induction recipe's and look at what people have done with veggies! You just have to do it! Just pick something you know you dont hate and cook it up and try it (smother it in melted butter if you aren't sure)! Good luck - its worth it, plus you will go to the bathroom better!

                    Yeah I was eating Yucca which can be made into a cassave way before I started atkins, Yucca is a vegetable that I dont eat right now because it is not part of the list darn lol. I printed the list of vegetables and i am going to look for one of them and see what it taste like, there are alot of this things I have never heard of.

                      I also do not like vegetables. And is very hard for me. Do you like cucumbers? Or pickles? I make a salad with sliced cucumbers, Just a slice of tomato(cut in very small peaces) and sour cream.

                        ROFL!!! Sneaky...

                        For veggies, I've found that quiche with broccoli and tomatoes lasts a good while. You could also make a low carb shepherd's pie with mashed fauxtatoes topped with cheese. There's a recipe for that on Linda's low carb menu site, it's delicious.
