    Hello all I am Hispanic, I was reading doctor's atkins list of 52 vegetables that we are allowed to eat during induction. Some of those veggies I dont recognize but I dont know if they are part of the spanish group, you know yucca, sweet potatoes etc etc any of you know which hispanic vegetables are allowed? if any?

    I started atkins in late november but every other week just sort of fell off the wagon and was not working out..late december I started to really follow it and added the gym from november to december I only lost like 7 lbs not following it right..from december to march 18 I lost 50 lbs give or take depending what mood my scale is on lol.

    Well, I don't really know which vegetables are considered Spanish vegetables. But I do know that there is a very specific list of vegetables that we are allowed to eat on Induction. Starchy vegetables are added back later on, in Rung 8.

    Sweet potato is definitely a starchy vegetable, and cannot be eaten until Rung 8. I wasn't familiar with yucca, so I researched it. This is what I came up with:


    cassava = casava = manioc = mandioca = tapioca root = yucca = yucca root = yuca root = Brazilian arrowroot Pronunciation: kuh-SAH-vuh Notes: People in Hispanic countries use cassavas much like Americans use potatoes. There's both a sweet and a bitter variety of cassava. The sweet one can be eaten raw, but the bitter one requires cooking to destroy the harmful prussic acid it contains. It's often best to buy frozen cassava, since the fresh kind is hard to peel. Look for it in Hispanic markets. It doesn't store well, so use it within a day or two of purchase.

    I used fitday.com to look up the carb count for cassava, and it contains almost 75g net carb per cup. This is something that you will definitely have to wait to eat.

    So you live in Florida? It should be easy to find most (if not all) of the vegetables on the Allowed list. Time for some experimenting!

    Salad Vegetables
    You can have two to three cups per day of:

    alfalfa sprouts
    daikon
    mushrooms
    arugula
    endive
    parsley
    bok choy
    escarole
    peppers
    celery
    fennel
    radicchio
    chicory
    jicama
    radishes
    chives
    lettuce
    romaine lettuce
    cucumber
    moche
    sorrel
    These salad vegetables are high in phytonutrients and provide a good source of fiber.

    Other Vegetables
    You can have one cup per day of these veggies if salad does not exceed two cups. The following vegetables are slightly higher in carbohydrate content than the salad vegetables:

    artichoke
    celery root
    pumpkin
    artichoke hearts
    rhubarb
    asparagus
    chard
    sauerkraut
    bamboo shoots
    collard greens
    scallions
    dandelion
    snow peas
    bean sprouts
    dandelion greens
    spaghetti squash
    beet greens
    eggplant
    spinach
    broccoli
    hearts of palm
    string or wax beans
    broccoli rabe
    kale
    summer squash
    brussels
    kohlrabi
    tomato
    bean sprouts
    leeks
    turnips
    cabbage
    okra
    water chestnuts
    cauliflower
    onion
    zucchini
    If a vegetable, such as spinach or tomato, cooks down significantly, it must be measured raw so as not to underestimate its carb count.

        You know Mitzie your eye popping smiley crack me up! hahaha now cassava or cassave is what we make with the Yucca the Yucca root is like a potatoe so maybe it is less carb I will have to check it out more cause i can totally do Yucca 24/7!
