  • Yikes - low carb menu on Thanksgiving and will still be eating 113 carbs

    HI -

I am sure a lot of you have handled this in the past but I pulled all my low carb thanksgiving recipes last night and plugged in the ingredients in FITDAY.

I was aghast to find that if I ate everything I cooked not including bread or candied yams even with splenda and no breadcrumbs or flour I will still be consuming 113 carbs.

    Yikes......

So what do you guys do....do you just eat certain things and not others......

What exactly are you planning to eat?

You can have regular meals. Just because it's Thanksgiving you don't have to eat all the stuff (or the low carb version of it) you were eating pre-Atkins.

And you don't have to eat from everything that's on the table either. Not in one day at least.

Turkey is carb free - and the skin if nice and fatt
You can make low carb gravy easily
cauliflower mash is a very good substitute for potatoes
pumpkin dessert with cream cheese is absoluty wonderful
On rung 4 you can add a nice cranberry sauce made with splenda.

Thanksgving is a piece of cake (Ok I mean steak)

I'm going to be doing the big Thanksgiving get together with my huge Cajun family, too, and I guess I don't see the holiday as an excuse to gorge myself anymore. I see it more as an opportunity to spend time with relatives, and sure, enjoy dining with them. I plan to eat a normal Atkins-legal dinner and I guarantee that won't detract from the fun we'll have!

Turkey, green beans w/bacon, pumpkin pie made with splenda (don't eat the crust), fresh yam half, and a spoonful of fresh cranberry relish (berries, celery, orange). Less than 50--if you are in Induction, skip the berries and the yam.
Lots of stuffed celery/cream cheese and olives, too.

I've decided that the only way for me to stick to plan on Thanksgiving is to make my own separate meal to take to MIL's house. Granted, it's going to be GOOD! HA! Like I'm going to share with them...*wicked laugh*

            Parmesan and herb chicken
            mashed cauliflower
            fresh turnip greens

And for dessert....I'm going to experiment with the flax muffins and pumpkin and see how that turns out.

Re: Yikes - low carb menu on Thanksgiving and will still be eating 113 carbs

The menu in my household is going to be a serious departure from our typical Thanksgiving feast. Turkey (brined and given an herbed butter massage); green beans boiled in chicken stock with bacon and onion; roasted garlic mashed fauxtatoes (no gravy, just a sprinkle of turkey juice); sautéed spinach and mushrooms; and salad.

No dessert planned as yet (neither Mr. Shrew nor I enjoy pumpkin enough to want to make a legal dessert with it), so what we have planned is 25 net grams of carb. I might make a legal (crustless) cheesecake topped with blueberry topping (frozen unsweetened berries boiled with a bit of of Splenda, a squeeze of lemon and some spices), but we'll see.

Will we miss the stuffing, gravy, rolls, yams and sour cream blueberry pie that we'd normally eat? Yes and no. Yes, because Mr. Shrew puts out a super-tasty spread for the holidays. No, because everything we do have planned is going to taste fantastic - just not carb-tastic!

I'm thinking of getting a turkey rap and cooking it with some pinapple and making sugar free cranberry sause. This will be for everyone. For myself I am going to make what I call mash (cauliflower and broccoli) and maybe some green beans with bacon. For everyone else I will make mashed potatoes and maybe stuffing. We will see...i've never cooked thanksgiving dinner before and a whole turkey cost way to much to buy.

It sounds as if you have got it all well worked out - though maybe cook the pineapple seperately not with the turkey so you can enjoy the bird too!
Wondering how to get 'most' of your net carbs from your induction veggies?
