  • Mascarpone cheese

    I have seen a few people mention this for some tasty sounding recipes. I can't find it.

    Anyway, I found info on making your own or substituting. Here are the options:

    -Blend 8 ounces softened cream cheese with 1/4 cup whipping cream.

    -Blend 8 ounces softened cream cheese with 1/4 cup butter and 1/4 cup cream

    -Blend 8 ounces softened cream cheese with 1/8 cup whipping cream and 1/8 cup sour cream.

    -Whip ricotta cheese in a blender until smooth (lower in fat)

    Which one do you think would be the closest to it. I'm going to use it for a crepe (made of eggs, cream cheese, cinnamon). Or do you know where I can get the real stuff? What other things could I use it in if I can find it? Just crepes?

    I use marscapone. I would say the closest thing would be to whip some fresh ricotta up with some softened cream cheese.
