I spend most of my time in a car as you may have guessed. We don't get lunch breaks most days so I have to grab what I can. I need some ideas for meals I can put in a small collier. Any websites suggestions would be helpful.

I can tell you what worked really well for me when I followed this WOE a few years ago. I was in much the same situation as you are now.
Chicken, Roast Beef, Tuna or Eggs, made into a salad
(ie: Eggs, diced green onion, diced celery, mayonnaise)
Ham roll ups (cream cheese, pickle spear, in center)
Chicken Wings or other cold chicken
Hard Boiled Eggs
Deviled Eggs
Any Raw Veggies snacks...Radishes, celery sticks, bell pepper slices, Cucumber slices w/lemon juice and chili powder ,
LC coleslaw
LC broccoli slaw
cheese sticks
Keep an open mind, and good luck on your journey. This can work for you

I have 20 mins average for lunch (high school teacher) so I have a small fridge in my classroom. I store several items there regularly (sliced deli meats and cheeses, olives, pickles, containers of cut veggies such as broccoli and cauliflower florets and celery sticks, bags of precut salad greens and fresh spinach). If I'm out I pack it at home, a plastic bowl of salad greens and veggies with a pouch of tuna and a small plastic container of dressing... pile it all in there then unzip the tuna and pour the dressing right when I'm ready to eat. I swear I never get tired of it since I discovered the flavored tuna. Be careful of the bbq flavor and certain others as they have carbs. Also the smoked salmon in a pouch is awesome but will make my classroom (and your squad car) smell like cat food. LOL There are also pouches of cooked chicken, cans of baby shrimp, lots of ways to add meat to a salad without refrigeration. Mayonnaise type dressings may go bad, but Italian is fine... or ask a fast food store for extra packets of ranch or caesar...
I've also packed leftovers from casseroles and soups, but you'd need a microwave. Oh and there are frozen stirfry items I found recently that don't have any rice in them. I pick out the carrots, but so far they've been great for a quick zap-and-eat lunch.

Be careful of these packets ... they are very often not the same as the brand in the bottle ... for example, the Paul Newman's Ranch at McDonald's is "Water, soybean oil, corn syrup solids, buttermilk, distilled vinegar, egg yolks, salt, sugar, corn starch, chives, garlic powder, onion powder, natural flavors (dairy and animal source), lactic acid, parsley, xanthan gum, lemon juice concentrate." for 9 net carbs.
And the store bought is "Igredients: Vegetable Oil (Soybean Oil and/or Canola Oil), Water, Distilled Vinegar, Egg Yolk, Sugar, Buttermilk Solids, Contains 2% Or Less of Salt, Garlic*, Onion*, Natural Flavors, Phosphoric Acid, Spice, Xanthan Gum, Yeast Extract, Beta Carotene (Color)" at 2 net carbs per serving.
No matter where you go, you need to read the list of ingredients!J.

I often will make a salad/no dressing, then mix tuna or chicken or boiled egg with mayo in a sperate container. At lunch I dump the tuna on top of the salad. I don't find I need extra dressing (but you certainly could use it if you want). I keep it all in an insulated lunch bag with an ice pack.
