  • So I ran out of eggs this morning..

So I ran out of eggs this morning and was wondering what I was going to eat for breakfast, I hate salads..with a passion but I try to eat them anyways because this is a new way of eating so you have to try it. Anyways I try to eat half my salad intake with breakfast and half for lunch or dinner...this morning since I did not have any eggs I started to make bacon two strips of it, then i saw I still had a broiled chicken breast and cut that into pieces with little cheese..I was still eye balling the salad and the salad staring back at me so I took the bowl and dump it in the frying pan also hahaha So I fried my salad with everything else, I must say I cleaned my plate! so I want to know did I lose a lot of nutrients in the salad by frying it? because if not I may be frying my salad more often

What ever works. Good for you
I don't fry my salad as such but I eat my veggies fried most of the time. I like sauteed veggies - especially peppers and mushrooms so that is how I eat them sauteed in olive oil.

What a wonderful idea... just curious did the lettuce wilt like spinach does? Was it watery or did you just leave it for a minute or two?

I doubt you lost much in the way of nutrients as the fat in the sauteeing process helps make the vegetables give you MORE nutrients then you'd get if you just ate them plain. In some instances, you get 20X more vitamins and minerals when you ingest your veggies with fat. It breaks the cellulose down so that your body can get at all the important stuff - as humans don't process cellulose very well (think corn). Which is why it's recommended to eat your salad with full-fat dressing or cheese or avacado, or any other food with good fats in it. At least that's what I've learned.

When I'm just cornered for a veggie, I'll quickly stir-fry cabbage in butter with pepper and voila! It's always delicious!

Re: So I ran out of eggs this morning..

Glad you found a way to make your salad tasty!

Since I started gardening about a year and a half ago, I've learned that the reason a lot of lettuces/greens taste yucky is because they are not fresh, or grown in a way that made them bitter (like too warm weather). Arugula in particular bought from a store tastes NOTHING like the delicious plants I grow in my backyard. If you can get the freshest greens at a high quality grocery store or farmer's market, you may find that you like salad better. I LOVE the salad greens I've been able to grow in the fall and winter here. Fresh salad greens can be out of this world wonderful. But the usual stuff you get in the supermarket is pretty bleh.

I have a few greens growing right now but not enough to keep me in salads. Baby spinach bags from Trader Joe's are the best I can find in my area, as far as taste and the ability to keep fresh for a few days.

Just a thought--I think frying is a great idea!

Excellent reminder - I love this too, and haven't had it in quite a while but have a lot of greens in my fall/winter garden right now that this would work with. And you know, in the far south, if you are really, really country... this is known as "kilt lettuce" (killed lettuce), LOL!
