Looking for the name of noodles

I am posting here because someone on induction had asked about them on this particular forum. I am no longer on induction and would like to try the plant-based, very low carb noodles, but I can't remember the name of them.

Hi, Joanner! The name of the noodle you are seeking is shiritake or "miracle noodles". They're soy-based, so if you have any soy aversions, you might want to avoid these. For many, they're pretty wonderful, I've heard. Soy aversion here, so I avoid soy.

Thanks. I am going to try some with the cauliflower alfredo sauce--as soon as I can get some of the noodles.

Joanner-- that sounds fabulous, really. I don't think I could live in a world without alfredo.

Have you tried spaghetti squash as a noodle option? It's really pretty wonderful. I enjoy mine with alfredo and pine nuts in OWL (not induction). Spaghetti squash is slightly higher in carb content, but it is pretty wonderful stuff--especially with that alfredo you're thinking about. It's also incredibly easy to make.

What is in the alfredo you're using, anyway? Is it pureed cauliflower? It sounds hearty!

Thanks, Joanner, for the link! I love him and worked with him at Examiner.com when I was the national low-carb columnist there! He is a great guy and has a super sense of humor. (Instead of his breadcrumbs, try grated Parmesan cheese instead)(For inductioners, also don't add the lemon)

Definitely try the spaghetti squash while you're searching for the other noodles (buy a tiny one to try it out). It is so very easy to make. I don't think you'd be disappointed, especially if you like squash.

I LOVE squash. All kinds of squash. Yummmm..... Has to be my favorite vegetable. Will definitely try the spaghetti squash.

You will not be disappointed. And since spaghetti squash is perfect for induction (stick to a cup, since it packs 8 net carbs per as one of the non-salad veggies), it's one of those treats people can enjoy from the beginning.
