Pork Chitterlings?

  • Pork Chitterlings?

    So I was at our local Grocery outlet today and they had some Frozen pork Chitterlings. So I picked up a slab. It says all natural and no other ingredients. o carbs. It's raw and came in a flat slab. I'm assuming this is the same stuff that pork rinds are made out of. But what exactly is it and how do I cook it?

    I don't think chitterlings are the same as pork rinds which are made from pig skin with fat left on it.

    I just googled them and it seems they are pigs intestines - apparently tasty and definitely Atkins-friendly depending on what you add when cooking them.

    If you google for chitterlings recipes you should get some ideas on how to cook them

      Umm....

      While I live in Georgia, I am a transplanted yankee living down here against my will. I believe the folks down here boil them and then fry them.(They fry everything) I also understand that you have to wash them very well because they have waste products in them. Usually they are eaten with greens and or spaghetti.

      Update: My neighbor who is a true southern lady says that she boils them with onion, bay leaves, salt, pepper, and cayenne pepper. You can fry them afterwords, but she doesn't.

        Thanks, Guys. I just googled it also. Interesting stuff It's always nice, though, to find people on here that eat something like this regularily and can give me first hand advice

          Everyone eats them in my family except for me, I can't imagine eating intestine lol. But they are boiled with various seasons depending on how u like them. Word of caution....when u cook them, ur house will smell horrible! Just like poop lol. So opening a window and put an onion in the pot too cuz it helps wit the smell

            Chitterlings are not just pig intestine, they're the LOWER intestine. Preparation is everything... you must really clean them and clean them well, picking all the fecal matter out of the folds and wrinkles. The fat should be left on the chitterlings. After cleaning, soak them in cold water for several minutes, drain, and soak them in cold water again several minutes. Change the water a third time, adding a chopped onion, a clove or two of minced garlic, salt and red pepper flakes. Set to boil for 3 to 4 hours. They're usually served alongside greens or pasta and eaten with vinegar and Louisiana hot sauce.

            For most people who enjoy chitterlings it's a nostalgic experience... they're considered a comfort food as it's something eaten only at the family dinner table, more specifically Grandma's dinner table...

            Pork rind is the skin of the pig. It's called pork scratching (fried) or pork cracklings (roasted). I believe if you go to a Mexican market you can buy pork skin for the purpose of frying "chicharrones" or what we think of as pork rinds.
