  • nice recipe.. came up from an experiment

    hi everybody, this is a tasty (to my taste) recipe i invented the other day... there is a creperie in town.... and i tried to do it at home without the crepe and came up quite nice!! it is very low carb and very tasty and satisfying

    1 chicken breast boiled and shredded
    you place it in a microwave dish
    on top:
    salt and pepper
    green pepper stripes, about 5-6
    5 thin slices of tomato
    i small spring onion slices
    2 tablespoons heavy cream
    2 oz feta cheese shreded
    4 oz emmental, gouda or other yellow cheese on top
    you put it in the micro for 2 min or till the cheese melts

    and


    enjoy!!!!

        Here's a crepe recipe to go along with it. I use it often to make wraps, etc. It's totally induction friendly, too.

        1 egg
        1 tablespoon cream
        1 teaspoon oil (I don't like olive oil for this if using this for like a dessert type crepe)
        1 tablespoon flax meal
        1/8 teaspoon vanilla (nice again for more of a dessert crepe, I might add some savoury spices for a main dish one)

        Just mix all the ingredients up well, butter a crepe pan or flat griddle and pour the batter in, swirling the pan around to make it fairly thin. Cook it over medium heat until the top looks kind of dry, flip it over and cook for a few more seconds. If you're not comfortable flipping it with a pancake spatula, just slide it onto a plate, then tip it back into the pan. When it's done, slide it back on a plate and put your filling in, roll it up and away you go.

          i wish i could try making the crepe you suggested... but i live in a greek island... and i dont have access to many products, like in this case the flax meal, i am though planning a trip to athens, in which kind of shop you think i can find it? those that sell natural foods ? i hope so because i see it comes from a canadian plant.. other suggestions instead of flax meal?

            Flax seed is also called linseed, if that helps you. You can buy them whole and grind them yourself in a coffee grinder.
            Looking at Isabeau's recipe I'm thinking that if you are on the nut rung you could add in 1 TBS of ground almonds or hazelnuts and that should give you a similar product. Or even just omit the flax meal altogether and it should be fine, I would think.

            In Canada we can get flax seed in natural food stores as well as a regular grocery store.

              Yeah, you can elimate the flax, no problem. I found it more breadlike with the flax and more eggy without.
