    Are there any canned soups that have no or very low carbs? I spent a good 15 minutes in the market checking labels and I can't find any. Did I miss one? (BTW, in my kitchen broth is not a soup, it's an ingredient. http://www.atkinsdietbulletinboard.c...cons/icon7.gif)

    It's hard to believe that there isn't at least one. It's not hard to make; I do it all the time. But I won't have my crock pot back for another month and there's nothing like soup on a cold day.

    I have never found a canned soup but I do make chicken veggie soup that is all safe. Be careful with canned chicken broth, I actually bought some that had sugar in it!

      While you might find one, the list of ingredients will likely render it not Atkins friendly.

      Best to make your own. You don't need a crock pot to make soup.

          I like to make a batch of soup on a weekend, but I just use a stock pot. I divide the batch into freezer containers. For lunches I pull one out of the freezer before going to work... thawed by noon and ready for the microwave. To be honest, I don't know I'd want to go back to canned soup after such a treat as homemade. Besides, nothing beats knowing exactly what's in my bowl.

            {Large sigh} That's what it looked like from my grocery store survey. Thanks for confirming my impression, although I would've preferred to be wrong.

            Indeed, the home made stuff is far better than the canned. I much prefer my own creations, if I do say so myself! But without my crock pot - which never gets cold, as we used to say about my grandma's tea kettle - I get lazy. That Tuscano soup you mentioned is definitely going to get a tryout, though. Have to locate some good Italian sausage first. I'm thinking that peccorino Romano would do even better than the parmensan, too.

            And as for making a batch on the weekend, that's exactly what I do. We'll have, say, a roast chicken for dinner and than in the evening the carcass goes in the pot with some onions, a leek or two, perhaps a red or green pepper, and whatever happens to be the spice cupboard. (O.K., not literally. Change to "whatever appropriate happens to be the spice cupboard". Contrary to what my wife will tell you, I do not put garlic in absolutely everything. But a touch in chicken soup will do it no harm.) Set it to cook on slow and by the next day it's ready and with enough to save for the week.

                I'm making stock right now with a chicken carcass in the pressure cooker. Add onion, celery, handful of peppercorns, 8 quarts or so of water and cook at 15 lbs pressure for 30 to 40 mins. Really cuts the cooking time, and the flavor is wonderful.

                  Now that's an excellent idea. I do have a pressure cooker. I stored it in the garage (somewhere!) when I started on Atkins. Its principal use up til then was for making lamb stew and I can't imagine lamb stew without carrots and potatoes. (Yes, I could always give the carrots and potatoes to Herself and only have the lamb myself but I keep imagining the carbs migrating from the potatoes and hiding themselves in the meat. That's probably idiotic but the image stays in the mind.)

                  Will have to hunt for the pressure cooker tomorrow.

                  Elizellen: I may not be a great cook but I get points for enthusiasm. My poor wife has had to suffer through more than one of my concoctions that turned out to be, shall we say, somewhat less of a taste sensation in reality than it was in my imagination.

                    I just make soup in a pot My favorite Linda recipe is Southwestern Creamy Taco Soup, I think thats what it's called. It's on the spicy side because it calls for Rotel, but I think Rotel makes a milder version now.

                    I've also looked for low carb variety and the only one is chicken broth, beef broth
