Okay....I got some queso fresco today. Any ideas for using it? Oh...and I think I saw somewhere that you have to freeze it before you cut it....does this mean completely frozen? Won't that be hard to cut.
I'm making this mexican lasagna tonight that I usually make with tortillas (I don't eat the tortillas). I wondered about using the queso fresco somehow to make the tortilla layers instead?
