Queso Fresco?

Okay....I got some queso fresco today. Any ideas for using it? Oh...and I think I saw somewhere that you have to freeze it before you cut it....does this mean completely frozen? Won't that be hard to cut.

I'm making this mexican lasagna tonight that I usually make with tortillas (I don't eat the tortillas). I wondered about using the queso fresco somehow to make the tortilla layers instead?

Queso Fresco.... My kind of cheese. I don't know about freezing it... but it tastes great with alot. That cheese is actually ment to Crumble. So just make yourself some scrambled eggs and crumble some over your eggs. Or just slice it and bite it. Lovely.
