I have been doing some low carb baking with homemade almond flour. I have run into a problem, however, in that twice I have made banana muffins with almond flour that has made my mouth tingle. I thought it might have been my imagination the first time, and I forgot about the tingling problem. I made them again a few hours ago, and my mouth tingled and felt kind of numb, and I just felt weird. I got paranoid about going into anaphylaxis. I took some Benadryl (on top of the Zyrtec I take every day), and now I feel better.
I really don't understand. I have never had a reaction to almonds or any other nut. In fact, my husband commented that I was eating lots of no-sugar chocolate covered almonds the other day. I have eaten that banana muffin recipe many times made with whole wheat flour (before I went back on low carb seriously).
I wonder if it's that particular brand of almonds (from BJ's wholesale club) that is cross contaminated with something else? Or just that it's a large amount of almond. All I had was a few spoonfulls of the batter to set off the reaction.
Frustrating because I liked those muffins. I am thinking about getting a doctor to prescribe me an Epipen, since nut allergies can be dangerous.
I have respiratory allergies, slight asthma, and eczema. Pineapple used to make my mouth itch but doesn't anymore. I had mouth ulcerations after eating fresh tomatoes from my garden early last summer, but tried the tomatoes again a few weeks later and had no reactions whatsoever, even when eating large amounts. It may have been some grass pollen inside the tomatoes in the early summer...
Anyone have any thoughts? Almond is such a handy thing to be able to eat when you're doing low carb.
