Hi everyone! I had a couple of questions regarding soy and almond flour. Are they "legal" for Owl rung 1? I couldn't find any info. in the book. (May have overlooked) I was just wondering if anyone knew the carb count and if it is o.k. to bake with these flours. I have also read some recipes containing Soy Isolate. I have been having some pretty severe cravings for pizza, and thought I could make a crust with these flours. Any advice or info. you all have would be GREATLY appreciated! Thank you.

almond is rung 3
soy is rung 6
careful of soy make sure your soy is fermented properly i only know of japan fermenting it properly though

the OWL additions are in order if addition

fresh dairy
nuts/seed
berries
alcohol
legumes
other fruits
root veggies
whole grains
you can spend a week or longer on each but don't jump to a higher rung and then go back. the order is based on glycemic index of the foods so the lower ones should be easier on your craving controls and weigh loss then the last ones.by the book atkinseer

I would hold off on the flours, and probably baking in general. Induction is a good time to rid yourself of some of the things that got us where we are. It is an opportunity to try veggies and other foods that never tasted "Good" when we were eating high carb/sugary foods. Who knew brocolli tasted sweet. I didn't until Adkins.

while you are on CLeo's website check out her other induction legal "breads" she has zuchinni taco shells and something called an oopsie that is induction legal and easy if you can fold whipped egg whites into creamcheese and egg yolksby the book atkinseer

Sorry but no soy, no almonds for OWL Rung 1. Rung 1 is just adding more veggies. If you're craving pizza, how about flaxmeal pizza crust? I've had this many times and really like it.
When you get to the nut rung you can try almond flour. Soy flour has to wait for the legume rung.

1 cup cooked, riced cauliflower**
1 egg
1 cup mozzarella cheese
1/2tsp fennel
1 tsp oregano
2 tsp parsley
pizza or alfredo sauce
toppings
mozzarella cheese
Preheat oven to 450 degrees farenheit.
Spray a cookie sheet with non-stick spray.
In a medium bowl, combine cauliflower, egg and mozzarella. Press
evenly on the pan. Sprinkle evenly with fennel, oregano and parsley.
Bake at 450 degrees for 12-15 minutes (15-20 minutes if you double the recipe).
Remove the pan from the oven. To the crust, add sauce, then toppings and cheese.
Place under a broiler at high heat just until cheese is melted.
Can use frozen cauliflower prepared according to package directions. After cooked and slightly cooled, shred cauliflower with a cheese grater, and then measure for the recipe. (Don't pack down the cup with cauliflower. Just fill it with a spoon or the cup itself.)
Or you can steam the cauliflower and mash it with a fork, strain all the water out then add the cheese and egg. This way all the water comes out of the cauliflower and it mixes much better with the cheese and egg and isn't runny.J.

Oh, well! I found a pretty good looking recipe for "pizza" with a cheese crust. Maybe I'll try that out. Thanks again!
