    Flaxseed muffin

    Thank you to whoever gave me the flaxmeal muffin recipe. I made it in the microwave and was so good. I felt like I was cheating! I've always wanted to have flaxseed every day just for the health benefits but it sure is a great source of the fiber I've been needing. I ended up pre-measuring the dry ingredients and putting them in individual bags so they're ready to go when I want one.

      The only thing is that I see that flaxseed meal should be limited depending on where you're at with the diet. I found posts here at: http://www.atkinsdietbulletinboard.c...-question.html. I guess I can't have that much flaxseed meal but I found another pumpkin recipe that looks good too for induction at: http://www.atkinsdietbulletinboard.c...in-recipe.html. Here's the flaxmeal recipe:

      Muffin in a Minute

      Serving Size: 1

      1/4 cup flax meal
      1/2 teaspoon baking powder
      1 packet splenda packet (I use liquid sweetener here)
      1 teaspoon cinnamon
      1 large egg
      1 teaspoon butter

      Melt the butter in a large coffee mug - whisk in the egg - whisk in the rest - microwave for a minute.

          I'm not sure, I just got the recipe recently and haven't experimented. If you do a search on this forum, you'll get lots of information on muffins.

            I know people do make them in the oven ... though I much prefer to use my flaxseed pancake recipe and turn them into muffins.

            The texture of the Muffin in a Minute isn't, in my opinion, something that would work, baked.

              I would think so, but Not2late would be the person to ask. Make then and then freeze them for later. Flax meal should be kept in the freezer or refrigerator as it goes rancid very quickly, and I would think the same with the muffins.


              Great idea Maryannie about putting the ingredients in a baggie. I never thought about it, but that would be one way to speed up breakfast.

                  To the recipe above, I also add some water. Not sure if this makes any difference in the oven.

                    I like mine savory... just leave out the splenda and cinnamon, add some herbs and parm and cream cheese it after ahhhh nummy

                      That sounds good. im on induction can i have that. i dont see mention of the carb ammount in this.

                        When I eat them as a hamburger bun, I leave out the splenda and cinnamon and add onion and garlic salt. Very good!

                          Yes, they're find on Induction.
