Re: Which sweetener do you like best?

Interesting article from ‘All About Sweeteners’ suggesting that Neotame may be a better choice than Sucralose, Ace-K and Saccharin for low carb diet plans… ;-)

    Taste Receptors Where?!
    © by D. Eric Walters

We all know about taste buds on the tongue. But recently scientists have discovered taste receptors in an unexpected location: the lining of the small intestine.
Yes, sweet taste receptors have been found on intestinal epithelial cells. Fortunately, they aren't connected to our sense of taste. They are sensing the contents of the digestive system, in order to control and assist in the absorption process.
Glucose is absorbed in the intestine by a transporter called SGLT1. But when the sweet receptors in the intestine sense a high level of sweetness, they trigger the movement of a second transporter, GLUT2, to the cell surface. This doubles or triples the rate of sugar absorption [1]. The effect is seen with sugar and with the high potency sweeteners sucralose and acesulfame-K. In earlier times, when calories were scarce, this mechanism undoubtedly increased the efficiency of the digestive system. It made sure that sugar absorption was maximized. But now, when we have excessive calories available in our diet, it may contribute to obesity.
Think about the stereotypical "dieter" who has a diet soft drink with the french fries. The starch in the fries is broken down to glucose, and the artificial sweetener increases the supply of transporters, so that the glucose is more efficiently moved into the body!
There is another problem that arises with overconsumption of sweets. In experiments with mice, Margolskee and his colleagues showed that a diet high in carbohydrates will, over time, double the amount of the SGLT1 transporter that is present in the intestinal cells [2]. The artificial sweeteners acesulfame-K and saccharin also increased SGLT1 levels, suggesting that the taste receptors control the amount of transporter. Aspartame [Neotame] did not do this, but rodents cannot taste aspartame [neotame]. Besides, aspartame [neotame] is rapidly digested, so it would probably not affect glucose absorption, even in humans.

Re: Which sweetener do you like best?

I have been using Sun Crystals. It is made from pure cane sugar and stevia and worth 1 carb per packet. It is a little bit bitter but sweet too so if you only need a little it is pretty good. It doesn't take much at all to sweeten a cup of coffe. Maybe a third of a packet. It comes in a green box.

I have also heard ?s about Splenda from different sources such as news programs, online articles and I get a newsletter from a trainer and he has sent on article on side effects Splenda could possibly have. Nothing is totally proven though, so until then my opinion is that it is still considered safe in small amounts. I am a diet pop addict and I am buying the diet coke with splenda now. Trying to keep it to one can every other day! Going great so far. I have really noticed that my cravings for sweets and pop have gone down and water actually sounds good! Still having trouble with giving up more of my coffee though. Good Luck on finding a sweenter!

pure cane sugar would not be legal on the Atkins programme.

Thanks for the info. I actually used it before starting the diet when I was watching calories, but haven't used it so far since I started Atkins (it has only been 3 days) so I will not use it. Ignore my post above everyone!

I am a fan of no sweeteners first. But if I use anything it's Sweetleaf stevia in beverages and erythritol and xyltol in baking (least likely to cause gastric upset or blood sugar issues in most people).

I prefer savory over sweet so I don't use much sweeteners. However, in baked goods you do need a little sweet...I usually use xylitol.

I cut down the amount called for in recipes by a lot and they have always come out great. Your palate really does change on Atkins. Super sweet things are just not appealing anymore.
