According to Wikipaedia: "Typical fillers include meat, rice, fat, suet, bread, sweet potato, barley and oatmeal."
I believe you would have to know what's in it before deciding if it's safe for induction. I love boudin blanc, but the filler is rice so it's a no-no. Some chorizos are magnifico and have no carbs while others are loaded with sugar and fillers that aren't a part of my WOE. Check the ingredients of all foods before consuming, just a good rule of thumb.

British black pudding usually has flour and barley; the Irish version, flour so they would not be allowed until higher up on the OWL rungs. See if you can find French or Spanish black pudding as it often has none of these starchy ingredients. Check the ingredients to be sure.
