They are softer the first day,
Day two they are like a cracker, and I like to cut them in half or quarters, and use it as a cracker to hold egg salad or tuna salad.
I don't recommend putting them in any type of plastic bag or container, they will get too soggy, and possibly moldy. But mine rarely last more than 2 days.
I use the oopsie recipe, not the revolution rolls. Make sure you beat the egg whites properly, and when you fold them together with the egg yolks be VERY careful not to break down the whites.
Folding is a very gentle process. Forgive me if you already know this, but if you don't it is important, and can be a deal breaker on how they turn out.
I use the original revolution roll recipe which has half the cream cheese of the oopsies, and often make it with mayonnaise instead of the cream cheese if I want to use my cheese 'allowance' for something else.
You can make it more 'bready' by microwaving 1/3rd of the recipe in a small dish rather than ovenbaking it. This method makes a great burger bun!

I have yet to try anything but the original oopsie recipe-and that one batch was a Godsend!!
I've read of making them savory with different herbs, and even adding some splenda to make shortbread type rolls, with sf pudding, or a few berries, some whipped heavy cream *drool*
I did notice that putting them in ziplocs, even with a small opening, made them kinda sweat and stick to the sides of the bag......
3 years ago, I lost 60 pounds in 12 weekson Atkins.
I have PCOS, which makes my weight REALLY sensitive to carb intake, and I've gained back most of it since going off plan.
