however a lot of the parmesan has fillers or some ingredients i am not sure of
i know i can use blocked parmesan but it is very expensive- any ideas folks?

also i was thinking of making the oopsie rolls and letting them harden and then grinding them in the processor and using it as chicken coating- again any ideas?

I buy the blocks of parmesan and grate it myself as I don't trust the pregrated stuff.

Making breadcrumbs of the oopsies should work - I have done this with flax bread too.

People have used crushed pork rinds as a coating or a combo of pork rinds and parmesan cheese. There are some domestic (and inexpensive) Parmesan cheeses on the market. They will do the job of coating, just as well as an expensive imported Parmiggiano REggiano..

Some alternatives to parmesan are any of the hard, aged cheeses, like asiago, manchego, grana padano, etc.

              Re: parmesan cheese

It depends on what kind of chicken you're coating...

For chicken breast strips, I dip them first in beaten egg them in Kraft grated parmesan. It's good cheese, just check the label for ingredients. Should just have cheese. Fry them in oil and they're nummy... I have to watch the plate or my DH will eat them before I can serve up supper. LOL

For chicken wings I just deep fry them plain. I make sure to rinse them after cutting the tip off and the drummies apart. I pat them dry and let them sit out on paper towels for a bit so that the skins will get crispy. Louisiana hot sauce is nice, but I usually just give them a sprinkle of lemon pepper and roll in melted butter. About want to crawl onto the plate and cuddle 'em they're so good.

I baked wings today and used the hot sauce mixed with some melted butter, sprinkled on parmesan to top them off. OMG they were so good. I agree I could have cuddled up with them and lived happily ever after LOL

I use the Kraft cheese too, well my store brand the ingredients are the same on both jars.
