ok i am having a heck of a time eating these vegetables and really i want to throw up- no matter how hard i try to eat any vegetables i really want to gag- sorry not trying to gross anyone out-- i want to eat them , i really do, however it is getting hard- i believe some people have these so called super tasters on their tongue and it causes this gag reflex- anyway i need to get these veggies in- so i was wondering if i use canned pumpkin and mix it with cream cheese and cinnamon and a little splenda if this would be fine on induction- to me it meets all the ingredients but i want to run it past all of the induction/atkins masters here- thanks

What vegetables have you tried? How did you prepare them?
I really like the creamed cauliflower "fauxtatoes" recipe here on the Atkins site. Add a little cheddar and oh my it's good. The garlic really helps reduce the "cauliflower" taste. I like salads as well, but not plain. I usually pour on caesar or make a mayonnaise tuna salad and stir that in along with some grated asiago. Creamed style veggies are good... one I recently discovered was creamed fennel. Cooking removes the licorice taste and it's actually quite good. Fried radishes and fried turnips I found were a good substitute for fried potatoes and french fries. I don't know if this will help or not... Let us know, though, what veggies you've tried and how they're prepared.
Oh and another one I like is green beans cooked with a bouillon cube and a splash of lemon.

oh i have tried them all -- all through life-- i actually finished a bag of the cauliflower mashed but i didn't add garlic- maybe it helps as you said- brussel sprouts are a challenge but i can almost swallow them whole, but still so disgusting to me- i can't find snow peas here - pumpkin with spices and these faux mashed with garlic added might be my only hope

try frying some broccoli with loads of unsalted butter then after 2 mins flip it put feta cheese all over it then put the lid back on for another 2 mins
all that fatty butter and feta cheese makes it not taste like a vegetable at all and makes it taste good
also use fresh broccoli that you cut and none of that store bought frozen bag stuff cause that stuff is just loaded with stems
also cut mostly all the stems off and just eat the top flower parts

Oh goodness ok no, I don't care for brussel sprouts either! I know a lot of folks just love 'em. *shiver* Not me. Snow peas are ok I suppose blended in with other veggies, but I can think of more filling ways to get my veggies.
Some of my favorites are green beans (Chop up some bacon and fry it with some chopped onion. Stir in a can of green beans. Hint of lemon.) Fauxtatoes (cauliflower steamed with a clove or two of garlic, mashed with butter and cream cheese), guacamole (1/2 avocado mashed with a splash of lemon, diced tomato, salt), veggies stir-fried in olive oil then sprinkled with parmesan (sliced zucchini, yellow squash, onion, green pepper, garlic), veggies on skewers drizzled with olive oil, sprinkle with onion and garlic powder then grilled...
I like about any veggie "au gratin" that is with cream and cheese. Heck I can even down a few brussels like that.

OMG I feel for you. I have tried to explain to people my whole life that veggies do not taste the same to me and unless you are a person with the same problem you will never understand it.
I pretty much stick to lettuce, spinach leaves (don't like them much but I can get them down mixed in my salad), tomato, onion, some cucumber, jalepenos, pumpkin, celery and if I make kind of a stir fry with steak I can sneak in finely chopped bell peppers and they really have no flavor. But they have to be chopped small. Use to love carrots and mushrooms when I was little. Don't know what happened but I can't handle them now.
I did finally find jicima yesterday so I am going to give it a try.

Brandy, you beat me to it! Jicama has a sweet, watery taste. Can you manage green pepper strips or cucumber (try taking the seeds out due to slimyness)? Try dipping them in a a strong flavored dressing that's induction friendly.. Homemade Ranch, Caesar and/or Italian. What about juicing them and just "down the hatch" they will go?

True that about bagged frozen broccoli. Besides the stems give me gas like crazy. If I use the stems I peel them first. Broccoli can make a really nice slaw, too... shred it in the food processor and add mayo, herbs, salt and pepper. I make cole slaw the same way just with cabbage.

I have to say I hate veggies with a vengeance too, unless they are cooked down to smithereens and not the focal point. Ironically, I LOVE potatoes and corn, which technically are vegetables but have no business in my mouth.
I actually cook with lots of vegetables, most Cajun dishes are loaded with 'em. However, everything else that goes in those pots along with is off limits now, so I'm actually eating less veggies than usual now.
I'm ashamed to admit that my intake now is limited to salad veggies-different types of lettuce, and a little tomato, onion or green onion.
In my mind, I know that's terrible and I should grow up and eat my broccoli, but I will literally gag too....I envy people who enjoy them, I know my health and digestive system would be better off if I could suck it up.
I take a good quality multi-vitamin and hope that helps.3 years ago, I lost 60 pounds in 12 weeks on Atkins.
I have PCOS, which makes my weight REALLY sensitive to carb intake, and I've gained back most of it since going off plan.
Restarting 02/07/10.

Hi All,
What about soups? I've been experimenting with many different types of induction friendly soup over the last few weeks and they are a great way to get your veggies in without feeling like you are eating the blasted things
. Plus you can season the heck out of soup and make it taste anyway you want. So far I've make: Cream of Jalapeno soup, Zucchini Bisque, Roasted Red Pepper and Tomato and Tuscano Soup. All of which are either recipes you can find on Linda's Low Carb Recipe site or modification of those recipes based on what was in the fridge. I highly recommend them. You can throw whatever vegetable you want into the soup and then puree it with a hand mixer or blender and Presto! disappeared vegetables, nice thick soup broth.

In our local shops I often see people snapping off the stalks and putting only the florets into their bag before going to the checko. I eat a lot of my veggies roasted or steamed in butter.
I love asparagus, califlower, brussel sprouts and green beans roasted with olive oil, shallot chopped up and ground black pepper.
For steamed veggies I do things a little different than some. I take a stick of butter and cut it up in pats and lay them on a cookie sheet and freeze them. I add a few pats of butter to the ziplock I am putting my veggies in to store in the freezer. When I am ready to pull the veggies out they are all ready to go. I either open a slit in the ziplock so they can vent and throw them in the microwave or I dump them in a pot with a lid. As they cook the butter melts slowly and helps steam the veggies and it comes out really good.Mini Goals
