  • Last night I made Cauliflower Rice

    I just thought I'd say that last night I made a curry for my family. To serve with rice that they enjoy. I was just going to have the curry on it's own but then decided to make and effort and make Cauliflower Rice for my plate. It was great. ...it looked good and with the curry next to it and a little over it, it tasted just fine (and I felt great). Just thought I'd tell anyone who hasn't tried it, that's it's well worth the very small effort - and the best is that I didn't feel all full and sleepy and bloated afterwards. Woke up this morning, and felt even better - so just wanted to recommend it.

    Dear Kimmala,
    thanks for recommending it. I often have curries on their own and it just doesnºt seem right. Iºve heard of cauliflower rice but havenºt tried it yet because I didnºt know how it would be.

    I think Iºll give it a shot!

      Hi Rae,

      It's definitely great to have it on your plate - tastes fine. I'm now going to try Cauliflower Mash too - maybe next week. Going to mash it with butter and a tbsp of cream.......

        Thanks for recomending! I agree; cauliflower is a great substitute...

        For the riced cauli, I find it best if you just grate it on the big holed grater, then microwave (add a little salt) for very short time (like one and a half mins for a portion, or less). It shouldn't be mushy. Add a knob of butter... yumm.

        The cauli mash, is good boiled (and well drained), then pureed with a good knob of butter, a bit of grated parmesan(if liked), salt and a few drops of lemon juice (not too much, just enough to counteract the sweetness of the cauli). You can add a bit of cream too, if liked. I had some yesterday with minced beef... sort of mock shepherd's pie.

            I LOVE cauliflower rice! It's become a staple in my house. I bought one of those food choppers...you know where you hit the top of the pusher thing and it chops it up. Works great and less messy than the grater!

            Anyway, I use mine for my low carb sushi california rolls. YUMMMMMMMMM!!

                Cauliflower rice is wonderful!!

                I've had it plain, with stir-fry, and once "fried rice"-style. Very easy and very worth it. =)

                (Plus I don't feel like the odd one out when my family eats their jasmine rice.)
