Is vegetable glycerin used as a thickening agent? Can I use it to make a sugar-free ice cream syrup? What can I use to thicken gravies, sauces, etc. since I cannot use corn starch?

You would need to count each serving as one serving of sweetener. It's a few dozen times sweeter than sugar.
Ice cream needs no syrup. You can add a berry "sauce" (pureed berries) once you're on the berries rung of OWL. I would suggest you eat no ice cream on Induction.
Sauces can be thickened with pureed veggies, or by adding cream and reducing them. Many sauces don't need to be thickened at all; we're just used to have them thick.Natalie

I think some people use it for a sweetener. Those Atkins bars are stuffed with this product (it is the carbs they chose not to count)
For thickener I would think it is a bit too sweet - You can use veggies or maybe guar or xantham gum or thick and thin.
