    i'm NOT a fan of veggies.
    for the other veggie haters.. what are some tips in getting in your veg intake every day other than chokin' em back?

    currently i am having 2 cups of salad at lunch (salad being mixed greens) and then at dinner i typically have sauteed green beans, pepper and mushrooms.

    i'm finding rung 1 a bit difficult as i don't have a lot of veg that i like.

    (i did however make induction legal broccoli soup the other day which was to DIE for)

    I am not a big veggie fan but I don't mind keeping it simple. I can eat salad with no problem if I have a dressing I like. I eat green beans a lot because those are my favorite. Cauliflower, broccoli are standards for me and carrots sometimes now that I am in pre-maintenance. I also found out that I like zucchini and squash!

    So, I think it comes down to how you prepare them and making it something you can look forward to. Also, don't be afraid to try something new. And I recommend the Veggie Challenge on the forums here. I tried asparagus when I did that challenge and it was ok! Not something I eat often but I do eat it sometimes now.

    So asparagus, zucchini and squash are all veggies I added to my menus since i started Atkins.

      Remember that you can always eat the 'salad vegetables' cooked and many of the 'other vegetables' are good uncooked, so experiment to see which way you prefer.

      Cooking the 'salad veggies' often reduces them to quite a small serving, so you don't feel you are eating lots to make up your extra 5 net carbs on OWL rung 1.

      Also think of sneaking them into your meals, like adding sautééd chopped onions or peppers (with some cream added) to meat as a sauce.

        Checkout Linda's low carb recipes. They are yummy and you can't even tell they're the veggies you hate. For example, I hate cauliflower. Her site has recipes for faux rice and mac and cheese. Delish! She also gives you the carb info.

          Hi,

          I also could barely look at too many veggies a while back...LOL...to me corn on the cob was a GREAT VEGGIE!!!

          Anyway, my hubby started roasting them and I really began to love more of them...he would combine--asparagus, baby bok choy, mushrooms, green onion, leeks, ....add some sea salt, fresh ground pepper, drizzle on some olive oil...great.

          If you can not stand veggies, try hiding them in casseroles, or other veggie recipes...here are tons...
          but you can not follow the ATKINS WOE without the proper amount of veggies. It just will not work.

            I like to chop my veggies up really fine and mix them into tuna w/mayo, such as brocolli, celery & a jalepeno.

            I hated califlower. I can't remember the last time I had it before a couple of weeks ago. Then I bought a head of it and it sat in my fridge for a week. Hesitantly I made some faux mashed potatoes. Look in the recipe section here. It is sooooo easy to make and tasted great. The next morning, I mixed the leftovers with some parmasean and shredded cheddar cheese, formed into patties and fried in a little oil. Double wow!!! Try it...

            I also now like to make fajita's. Slice up some onions, bell peppers & garlic and saute in oil. Throw in your favorite meat cut into strips. Spice it up with some red peppers and you're good to go (with out the tortilla's of coarse).

            Bacon cut into strips, then browned before putting some fresh grean beans in is another favorite.

            That aught to get ya started...

              I Forgot about that...
              ...one day I was making Cleo's Cauliflower Pizza, and I had some leftover shredded cauliflower/egg mixture, and I fried it up like pancakes and poured a little SF pancake syrup on it. Who wudda thought you can eat your veggies in a pancake???

                I just can't imagine hating vegetables, so I feel for you folks! I'm not crazy about brussel sprouts, but do eat them and basically any other veggie I run across including ones I have barely heard of (and a few I had NEVER heard of). And I love basically every single one.

                Something you veggie haters might try is an old southern recipe - killed lettuce (aka, kilt salad or kilt lettuce) - very simple, quick, and you can adjust to suit yourself. Traditionally made with early spring greens and lettuces, but I've had with lots of things all year around - lettuces, baby spinach leaves, mustard greens, kale, whatever.

                All you really need is bacon and a big bowl of cut up fresh lettuce or greens of some kind (make sure the greens are dried off good) - if you like onions (green onions or scallions, young spring onions, I've had with red onions too), slice those up and add those to the bowl of lettuce/greens and toss. Make sure the greens are in a heat-proof bowl.

                Fry some bacon on medium in a skillet until crispy - remove to drain.

                Keep heating the bacon grease left in the pan, add some salt and pepper and stir. Some people add in a spoon of vinegar here too (or to the greens in the bowl), but other folks don't so your choice. Some also add a little sugar, but obviously that won't work for us so leave that off. Cook and stir the grease just for a minute or two, then pour over the greens and toss around. Crumble the bacon and add to the bowl. Serve immediately!

                There are as many slightly different variations on this as there are southern cooks I suppose, and I think they are all great, LOL! I've had this with sliced boiled eggs added to the salad along with the crumbled bacon, with straight bacon grease and nothing else, with grease and vinegar, grease and vinegar and sugar, with the onions cooked in the bacon grease and added, with the onions raw in with the greens, with no onions, etc etc. However you do it, just be careful with the hot grease and eat ASAP once you take the grease off the heat and stir up into the greens.

                Worth a try, and induction friendly!
