  • Winter comfort foods

    Hey guys, so I'm going to spend this weekend up in our cabin in the mountains. It's very much a winter wonderland up there due to all the storms, so we'll probably have to dig our way into the cabin and wont be leaving the whole time. I'm looking forward to just sitting around and relaxing and getting some studying in.

    Part of the whole experience is cooking and eating good food, and sitting around the fire drinking hot chocolate (or sake!). Needless to say, I'm going to have to modify things this time around.

    Does anyone have any suggestions for some favorite winter low carb comfort foods. Slow cooker style, or munch on all day style. I would like to still have the experience of lounging and not worrying about meals. I want food to be accessible, abundant, and legal.

    I'm thinking of pot roast recipes, or some-er-other. Thanks for your suggestions!

    Don't know what comfort food means to you, but this is my new favorite comfort food recipe---and have a fun vacation --


    Jicama
    I peel it, then slice it first into large thin flat pieces, and then lay the slices on a paper towel for a minute or two to remove the excess moisture so they will fry up ok. Then I slice them into thin strips and fry them in some butter and peanut oil, and when they are almost "burned", I turn off the heat, blot some of the oil off, and then sprinkle some cinnamon on them and give them a toss. Oh so Yummy! I soak up the extra moisture otherwise it seems they never get fried up enough.

      Welcome!

      Plan your meals for a few days so you have everything legal in your home. Linda's recipe site is very helpful with delicious recipes - you may be able to find some that will give you that "comfort food" taste you are looking for. This site will help keep you from eating the same thing over and over -- http://www.genaw.com/lowcarb/menus.html.

      I cook beef and pork roasts in my crock pot than make soup from the leftover meat the next day .... I just load the soup with lots of legal veggies and enjoy! Most recipes you made before should be ok for Atkins as long as the ingredients are on the acceptable food list and no sugars are added.

      The 2002 Dr Atkins New Diet Revolution (DANDR) is our guideline here on the board. Eat foods listed on the acceptable food list http://www.atkinsdietbulletinboard.com/forums/atkins-low-carb-dieting-faqs/6781-what-foods-can-eaten-induction.html, eating a variety of foods and vegetables and count all “net carbs” (carb minus fiber equal net carbs).

      Exercise, take a non-iron multivitamin and drink a minimum 64 ounces of pure water (nothing added), daily. If you need anything we try to help each other here as much as possible.

        Thank You! It looks like we're snowed in today in NJ and i bought a jicima yesterday! Yum, I think I'll try to make these later when the kids start asking for popcorn!

          Just a tip, when it fries up and yields very little.

            I was thinking crock pot type meals like chili con carne or pot roast with turnips and celery... roasted veggies are awesome too
