    florentine anyone?

Supper tonight was cod florentine... basically sauted cod fillets, sauted spinach, made a cream/parmesan/asiago/garlic sauce, mixed in the spinach and plated the creamy, garlic spinach as a bed for the filets.

Now I have never liked cooked spinach... It was always served in my childhood home with crumbled hard boiled egg and a cruet of vinegar. *making YUCK face* no no no...

...but this cod florentine oh-la-la fancy woohoo new recipe was just wonderful.

What ways have you found lately to dig into a veggie you formerly found unapproachable?

    Sounds delicious, Suzanne

It is a constant surprise to me how different cooking methods can change the taste of something entirely!
Wondering how to get 'most' of your net carbs from your induction veggies?
