  • Wow, that was good!

    I just made the most amazing tuna salad! I usually make it with lemon, mayo, celery and dill, but I thought I'd try something else with cilantro instead, since I have a fresh bunch of it. I practically inhaled it, and couldn't wait to share it with you!

    1 can of albacore tuna, drained and rinsed (rinsing takes away fishy-ness)
    1 quarter onion, diced (I used yellow, but red might be better)
    A handful of cilantro, chopped
    Some squeezes of lemon
    Salt to taste

    It was almost like the best ceviche I've ever had. Try not to eat it as fast as I did. YUMMERZ!!!

    I love cilantro on just about everything! It is great in tuna salad and the cilantro works as a chelation agent to remove mercury from your body too. I eat it daily here in China.

        Chinadoll, I had no idea that cilantro would do that! I shall continue to eat it!

          Herbs and spices are wonderful! They can really jazz up a dish and that prevents that food from becoming "boring".

          I make the same basic stuff over and over, but I use different spices and herbs all the time so it's just not baked chicken legs twice a week--it's lemon-thyme baked chicken legs, "italian" herbed baked chicken legs, five spice powder baked chicken legs, curry-flavored baked chicken legs, Jamaican jerk baked chicken legs, etc.

          PS: try chopped herbs in scrambled eggs: it's a gourmet treat.
