  • good veggies to roast?

    My friend made some amazing roast veggies last week, but used high carb starchy choices. I'd like to make my own improved version...what should I include? i'm actually trying to include some of the "out of the ordinary" stuff.

    Try any of these or combination of, drizzle with olive oil, season,
    sea salt, fresh pepper.

      I like a lot of weird veggies myself, but actually find that I enjoy yellow squash better than all others cooked this way.
      CHALLENGES: Walking - ? miles

      9th- 225 (college athletics weight, minus 126)

        Is yellow squash possibly the same as summer squash?
        I didn't see Yellow Sq on the Induction veggie list.

          I love roasted veggies.

          I sometimes take a small tomato and hollow it out, fill it with a mixture of cream cheese, crabmeat, salt, pepper and garlic then roast it until the tomato is soft and the cream cheese is kinda brown on top. Yum. This is also good with green peppers and topped with swiss cheese. Just becareful of your cheese count.

          I roast green beans with shallots
          Brussel sprouts
          Califlower
          Cherry tomato roast until they brown and start to burst
          Asparagus
          Broccoli
          Fennel is good roasted takes some of that bitter taste out.

          129- So I can say I am in the 120s- Met 3/29/10 128.7lbs yay
          125- 4/20/10 5 to go!

            Yeah, yellow squash, summer squash - same thing.

            I slice it into rounds like a cucumber slice, lay it out on the pan and drizzle with oil and sprinkle it with some veggie seasoning mix I have (watch for sugar, msg, or unlisted generic "spices" on the label if you use a seasoning mix), some sea salt and fresh ground pepper... really, really good.

              Leeks!
              I will ONLY weigh once per week! I will refer to DANDR 2002 and this forum when I have questions. I will revel in new recipes, new clothes, and the new feeling of being happy in my skin. I will hold myself accountable to do this the right way, without excuses, because I know that Atkins is the best thing for my health and happiness. I. Will. Succeed!

                Other good "roasting" Induction veggies are Belgium endive, celeriac (VERY GOOD!!!!!), kohlrabi, daikon radish and regular radishes, turnips and whole pumpkin chunks.

                Right before serving, I like to drizzle on more olive oil and mix in fresh chopped herbs.

                  See if your public library has a copy of The Roasted Vegetable by Andrea Chesman. It's been a while since I've read it, but I think it has a chart that has the veggies, how to prepare them for roasting, roasting temps and times.

                    Roasted jerusalem artichokes are great too, if you like unusual vegetables.
                    Made them taste quite sweet. I think we just used olive oil and sea salt.

                      this month's Southern Living has some recipes for roasted stuff... haven't tried it.. but they look and sound awesome

                      Roasted Fennel and Summer Squash..
                      Grilled Rainbow Peppers (tweak to leave out brown sugar.. and change vinegar type)
                      Roasted Green Beans and Cashews (could be made to work.. without cashews and soy sauce)

                      5-10-10 169.8 - 25 pounds gone!

                        If you don't like to eat the stalks of broccolli you can peel the tough skin from them and roast! Delish!!
