  • Loving these Oopsie Rolls...

I've made three batches so far. None with cream of tartar but they came out great, especially the last ones (the last ones came out very soft and fluffy). They making eating a hamburger not suck. Been using them as hamburger/steak sandwich buns.

I finally found some cream of tartar last night and plan on making more today. Going to try making them longer this time to substitute as a hotdog/sausage bun

    Cool.
I do not make them often but once in a while they come in handy.

          Cleochatra's Oopsie Rolls Recipe

They are a decent bread/bun substitute which is induction legal.

For those who do not want to use that much cream cheese or maybe not any at all you can make Revolution Rolls. (Atkins had this recipe in his first book)

            Here is a variation
            The ingredients are:
3 tablespoons of cream cheese or mayo
            1/8 teaspoon cream of tartar
            3 eggs, seperated
1 pack of sweetener (I often skip it)

                Re: Loving these Oopsie Rolls...

Like Liv I omit the sweetener as I use my rev rolls as bread roll substitutes. I often spread the mixture out into a large rectangle about 1/4" thick

and then cut it into 6 or 8 slices for sandwiches

Wondering how to get 'most' of your net carbs from your induction veggies?

                  Re: Loving these Oopsie Rolls...

Another tip from not2late is to make only 1/3rd of the recipe and cook it in the microwave instead of the oven.
It makes a much more 'breadier' roll.

                    Re: Loving these Oopsie Rolls...

Wow, really? In the microwave??? Something to think about! I have made these from day 1 because I needed something to ease my transition off of bread. Nowadays I don't really eat them very often since I am actually not missing bread. BUT I do make a couple of batches at a time and freeze the extras. Comes in handy when I know I will be hitting a fast food joint for a burger. They really look just like a regular bun on the outside to me.

I am going to try the modified revolution rolls because I had just looked up the old recipe from the first book and wanted something that would be more like a dinner roll or kaiser type roll. I really like the idea to spread it thin and slice it out like sandwich bread! Cool! I love getting new ideas from this board!!! Awesome! You guys are the best!

Scroll down to the bit about cooking 1/3rd of the recipe in the microwave

This method works just as well using mayo instead of the cream cheese

I'm going to do that this week. But going to use it as a pizza dough and see how it works out.

That should be interesting Andrew, do let us know how it goes.
I have sometimes used the 'muffin in a minute' batter for making pizzas but not the new rev roll or oopsies recipes.
Oh - Andrew, how did your hot dog rolls turn out?
