  • Salad issues...

Hello! Well, after checking out the book and the website, I am still a little confused about how much lettuce I can have during my induction.

I usually have tuna(1 can) or ground beef(about 1/3Lb) salad - I eat tuna/beef in lettuce, not tuna salad in the conventional way. I usually have about a cup and half worth of romaine lettuce in both(as well as a 1/4 cup of grated cheddar, olive oil, touch of mayo, blah blah).

I am a little confused, because, as we are all aware, I am allowed 20g net carbs but, according to the book, only 3 cups of lettuce(?), which is nowhere near 20g. I am a little nervous about this restriction because I LOOOOOVE my ground beef "cheeseburger salad" and I have eaten it all three meals a day, and I KNOW that I had more than 3 cups worth. While I certainly don't want to overdo it if it will impede my progress, I do have a hard time finding other veggies I really like. I am especially hindered in that I am an unemployed college student and my food budget is CRAZY low.

So if I do eat 3-4 cups of salad every day, shoud I not be eating any more veg, or do I add dif veg to 3 cups? Should I just switch it up and find more varied veggies? Am I simply misunderstanding the wording when it comes to allowed measurements? AHHH!!!!! Sorry. Anyway, help would be greatly appreciated since this board seems to have some of the most Atkins-savvy characters I have every come accross.

    Thank you and good night.

"Salad Vegetables" is the 2 cup category-which consists of all the veggies below. Does not mean only 2 cups of lettuce. Scroll to the bottom for how to get your veggies in...

    Salad Vegetables
You can have two to three cups per day of:

    alfalfa sprouts
    daikon
    mushrooms
    arugula
    endive
    parsley
    bok choy
    escarole
    peppers
    celery
    fennel
    radicchio
    chicory
    jicama
    radishes
    chives
    lettuce
    romaine lettuce
    cucumber
    mache
    sorrel
These salad vegetables are high in phytonutrients and provide a good source of fiber.

    Other Vegetables
You can have one cup per day of these veggies if salad does not exceed two cups. The following vegetables are slightly higher in carbohydrate content than the salad vegetables:

    artichoke
    celery root
    pumpkin
    artichoke hearts
    rhubarb
    asparagus
    chard
    sauerkraut
    bamboo shoots
    collard greens
    scallions
    dandelion
    snow peas
    bean sprouts
    dandelion greens
    spaghetti squash
    beet greens
    eggplant
    spinach
    broccoli
    hearts of palm
    string or wax beans
    broccoli rabe
    kale
    summer squash
    brussels
    kohlrabi
    tomato
    bean sprouts
    leeks
    turnips
    cabbage
    okra
    water chestnuts
    cauliflower
    onion
    zucchini
If a vegetable, such as spinach or tomato, cooks down significantly, it must be measured raw so as not to underestimate its carb count.

      From Rule 3 of induction
      3. Eat no more than 20 grams a day of carbohydrate, most of which must come in the form of salad greens and other vegetables. You can eat approximately three cups-loosely packed-of salad, or two cups of salad plus one cup of other vegetables (see the list of acceptable vegetables on pages 125-126).
So as you surmised, to get most of your up to 20 net carbs from your veggies you will need to choose different veggies from just lettuce.
Wondering how to get 'most' of your net carbs from your induction veggies?
Take a look at the thread from the latest Veggie Challenge to see how others manage it!
