  • Vegetarian low carbing

    Hey everyone!
I have read most of the New Atkins book and am glad to see how they included a section on vegetarian low carbing. I have wanted to become vegetarian for awhile but did not know how to incorporate this with a low carb diet. I am still learning how to do this.

It all started when I was driving down to Florida and was disgusted by seeing the trucks fillled with chickens, pigs and cows. They were crammed into the trucks and looked sick or dead and dirty. It really bothered me and the smell was vile. But I let it go and continued to eat meat. But the smell and image always stuck in the back of my mind.

I somehow became enlightened after a car accident and read Alicia Silverstone's new book, the Kind Diet. It's not a book about low carbing at all but it does talk about vegetarianism and eco and green living for health and the environment.

So the past week and half I have only been eating Vegetables, Fruits, Nuts, Legumes, Whole Grains, Brown Rice, Soy and Water. Also trying to eat organically. So for me, No meat, no dairy, no cheese [vegetarian cheese is horrible], no added/refined sugar, less processed foods, no fake sugar, no diet soda, no junk food.

I have lost 5 lbs so far. Being a strict low carber since 2007, losing 40 lbs on Atkins, I was shocked. Maybe my calorie intake was lower? maybe water loss? maybe this is just atkins woe but on the higher rungs and without the meat and dairy? I didn't work out but my job is physical. I was just confused.

I did have to sacrifice eating higher carbs for not eating animals. I just couldn't bring myself to eat them anymore and never really loved the taste anyway. Giving up cheese was harder for me.

Eventually I would like to go completely vegan, meaning not even wearing leather sneakers. I do not judge anyone who is a meat eater. But I just wanted to give support to anyone flirting with the idea of going vegetarian. You can do Atkins with a vegetarian diet as long as you are willing to incorporate some higher rung foods. And I have not seen slower weight loss as of yet. It was a personal choice for me to give up dairy and cheese but you can still keep that in if you want for more variety.

I am still a firm believer in Atkins even though I have tweaked it just a bit to go veg for myself. I am not sure I even want to use the term "low carb" anymore but rather say "Good Carbs" since I eat from higher rungs. This is still all a learning process for me and will keep you guys posted. Would like to hear from fellow veg/low carbers on this board with your thoughts, tips and ideas...

    Re: Vegetarian low carbing

    EH!!!!! I love you!
    XD Im a vegetarian too!
Im only on rung 1 though, so pretty much im just eating organic eggs, avocados, vegetables and butter with traces of cream or sour cream.
Im hoping as I go up the rungs I will be able to go vegan as well though.
how do you do it without eggs or dairy? Is your calorie intake okay?
...Would I be able to ask what your typical daily menu is like?

So Im just excited =D. Im happy you've made the right choice though, I find it frightening that you saw that.
A couple years ago I had to go the market, there were chickens in a little cage and the person that owned them had a son how was trying to pluck the chickens alive, I screamed and cried.
    Ready for change

Thanks for letting us know. I would be really interested in hearing your continued experiences. Not like I know much about it but one of the things to work on as a vegan is to make sure to get all the important amino acids with the protein sources, right?
